How To make Spinach Casserole
10 oz Spinach, chopped
-(frozen or fresh) 2 tb Butter (or margarine)
1 sm Onion, chopped
Yogurt, plain -(between 1-2 C) 2 tb Flour
Cheddar or parmesan cheese -(between 1-2 C), grated Salt Pepper Rinse and chop the spinach. Place the chopped spinach in a heavy skillet, cover, and steam until wilted, stirring occasionally. There is no need to add water other than what clings to the leaves from washing. (If you are using frozen spinach, place over low or medium heat to thaw and allow excess water to evaporate.) Transfer to small bowl. In a skillet, melt the butter (or margarine). Add the onion and cook until soft. Add the flour and stir for 1 minute over medium heat. Season the mixture to taste with salt and pepper, and then gradually whisk in the yogurt. Add the spinach and turn to coat the leaves. Remove from heat and blend in the cheese. Pour into a greased 8x4-inch loaf pan, and bake for 20 minutes at 350 degrees F. Spinach Egg Casserole
Ingredients:
8 eggs
1 bunch Spinach
1 tbsp olive oil
1/4 cup onion diced
1/4 cup red bell pepper diced
3-4 garlic cloves minced
salt pepper (per taste)
That is all. So quick but so delicious.
Bake 350F or 180C for 30 min.

Creamed Spinach Casserole:
1 - 10-ounce package frozen spinach, cooked according to package directions and drained well (press the water out with a spoon or paper towel to remove as much liquid as possible)
2 ounces softened cream cheese
1 egg, well beaten
1 cup sharp cheddar cheese
1 can cream of mushroom soup
garlic powder and pepper to taste
Topping:
1 sleeve of any round, buttery cracker that you like
3 tablespoons melted butter

For the potato puré:
5 big potatoes
2-3 tbsp butter
1 cup or less whole milk
salt to taste
For the Spinach Mushroom Layer:
1 big onion
4 tbsp olive oil
500gr. spinach
300gr. mushrooms
salt, black pepper to taste
For the Bechamel Sauce:
3 tbsp olive oil or 2 tbsp butter
2 tbsp all-purpose flour
1+1/2 cup milk
dash of nutmeg
salt to taste
grated mozzarella or fresh kashar cheese for topping
