INGREDIENTS:
-1 (10 ounce) package yellow rice mix
●1 cup onion , chopped
●1/2 cup green bell pepper , chopped
●1/2 cup carrot , chopped
●1 tablespoon olive oil
●2 cups cooked chicken, cubed
●1 (15 ounce) can black beans , drained
●1 (10 ounce) can diced tomatoes and green chilies
●2 cups grated monterey jack cheese , divided

+ For the chicken quesadillas:
Sharp cheddar cheese, grated
Monterey jack cheese, grated
3 chicken breasts, butterflied and pounded thin
Flour tortillas
Sauteed peppers and onions (optional)
2-3 Tbsp oil per quesadilla
Guac, salsa, and sour cream for serving
+ For the chicken marinade:
2 Tbsp vegetable oil
2 garlic cloves, crushed
1 tsp oregano
1 Tbsp cumin
1 tsp cayenne
1 tsp paprika
1 tsp white sugar
1 lime, juiced
1 Tbsp olive oil
1 tsp kosher salt
1 tsp freshly ground pepper
+ For the steak quesadillas:
1 skirt or hangar steak
Salt and pepper
Vegetable oil
Diced onion and pepper (to cook after the steak)
Monterey jack cheese, grated
Sharp cheddar cheese, grated
Flour tortillas
+ For the vegetarian quesadillas
1 zucchini, finely chopped
1 can corn, drained and rinsed
Vegetable oil
Monterey jack cheese, grated
Sharp cheddar cheese, grated
Flour tortillas
+ Fo the guac:
2 avocados
1/2 small red onion, finely chopped
1 large jalapeno, seeded and diced
2 cloves garlic, grated
1 lime, juiced
Cumin, to taste
Salt and pepper, to taste

We try to eat healthy in this house, which means we eat a lot of chicken. This is a great year-round black bean and chicken chili recipe that will be sure to please. It's full of flavor that only gets better the next day. Try this one the next time you are looking for a crowd-pleasing chili to serve for game day, Super Bowl, company potluck or just a great meal for the family.

Ingredients:
2 cans Black Beans
8 Chicken Thighs (trimmed and cubed)
2 Large Onions (chopped)
3 Garlic Clove (minced)
2 Cups Chicken Broth
2 Links Andouille Sausage (cut into chunks)
5 Tomatoes (chopped)
1-2 Jalapenos (diced)
1/2 cup Beer (I prefer Amber Ale)
2 Tbls Olive Oil
1 tsp Cumin
1/4 tsp Cinnamon
1 Tbls Chili Powder
1 Tbls Smoked Paprika
1/2 tsp Thyme
1/2 tsp Oregano
Salt & Pepper to taste
Optional Garnish:
Fresh Cilantro, Avocado, Sour Cream, Cheese (Monterey Jack preferred), Diced chilies & Tortilla chips
Directions:
1. Add both cans of black beans and the chicken broth to a sauce pan and bring it to a boil. Turn heat down to low and simmer.
2. Add olive oil to a large stock pot over medium heat, add the minced garlic and stir for 1-2 minutes, then add the cubed chicken and cook through.
3. Add the chopped onion and cook until translucent.
4. Add the cumin, chili powder, and smoked paprika and stir to mix through and let cook for 10-15 minutes over medium-to-medium low heat.
5. Add the thyme, oregano, beer, jalapeno and chopped tomatoes and cook for 15-20 minutes over medium-to-medium-low heat.
6. Add the beans and mix thoroughly and allow to simmer on low heat for 15-20 minutes.
7. Add the sausage and continue cooking over low heat for 10-15 minutes.
Serve with your choice of cheese, sour cream, cilantro, avocado, tortilla chips or other.

Sausage Chicken Black Bean & Rice Bake is one of those delicious dinners that comes together very quickly. Most of these items you already have on hand in your pantry and/or refrigerator. Dinner will be ready in no time as all you have to do is follow the quick and easy steps in this recipe video!
Sausage Chicken Black Bean & Rice bake starts with an array of colorful vegetables combine with grilled or baked chicken breast, smoked sausage, cooked rice, black beans, green chiles and your choice of shredded cheese (Colby and Monterey jack recommended).
The only three seasoning you will need are cayenne pepper (optional), salt and pepper! All of these ingredients blended together and just a few minutes in the oven creates a simple, delicious meal that will save you time and money.
Here is the recipe:
42g/ 3 tbsp. unsalted butter
39g/ 3/4 cup white onion (chopped)
11g/ 3/4 cup bell pepper (chopped)
4g/ 1 tsp minced garlic
4g/ 1 tsp salt
2g/ 1/2 tsp black pepper
2g/ 1/2 tsp cayenne pepper (optional)
340g/ 12oz fully cooked white boneless chicken breast ( cut into cubes)
170g/ 6oz fully cooked smoked sausage
300g/ 12oz diced tomatoes (drained)
113g/ 4oz chopped green chiles
283g/ 10oz black beans (drained)
375g/ 1.5 cups cooked rice
113g/ 1 cup shredded Colby and Monterey Jack cheese
Preheat oven to 375F/190C degrees
Bake at 375F/190C for 12 minutes
Remove from oven and top with shredded cheese
Return to oven and bake for an additional 5 minutes or until cheese melts.
