How To make Carrot Passion Layer Cake
2 c Flour, all-purpose
2 c Sugar
1 ts Cinnamon
2 ts Baking soda
4 lg Eggs
1 1/2 c Vegetable oil
3 c Carrots; grated
1 cn Crushed pineapple; 8-oz
1/2 c Black walnuts; chopped
Icing: 3/4 c Margarine
12 oz Cream cheese
6 c Confectioner's sugar; sifted
1 tb Vanilla extract
1 1/2 ts Lemon juice; fresh
1 c Coconut; shredded
degrees. Grease and flour three 9-inch cake pans. Sift together flour, sugar, cinnamon and baking soda; set aside. Beat the oil, eggs and carrots in a large bowl for 3-4 minutes. Add the sifted ingredients; beat 1 minute. Fold in pineapple and nuts. Pour into cake pans and bake for 30-35 minutes. Cool completely before frosting. Use the coconut for garnish. Icing: Beat softened margarine and cream cheese until fluffy. Add confectioners sugar, vanilla and lemon juice; beat until smooth. Carrot Cake Recipe
320g (1.5cups) Vegetable Oil
400g (2cups) Caster Sugar (Fine grained)
3 Eggs
5g (1teaspn) Vanilla essence or extract
400g (3cups) Plain Flour
10g (2 teaspns) Baking Soda
5g (1teaspn) Salt
4g (2 1/4 teaspn) Cinnamon
3g (1.5teaspns) Chinese Five Spice powder
500g (7 big) Carrots (peeled, grated)
METHOD
Preheat your oven to 150C or 350F.
In a bowl, grate carrots and set aside
In a mixer, add your oil, sugar, eggs and vanilla. Cream together until pale, light and creamy. Could take 5-10minutes.
In a separate bowl sift together your flour, baking soda, salt, cinnamon and 5 spice. Add it all at once to your mixer and turn on low until there are no dry ingredients left. Scrape down.
Add your carrots and let stand for 5 minutes. This gives the carrots time to release their moisture and ensures a very moist carrot cake.
Scale your batter into 3 x 8 or 9 round lined pans and bake for 23+ minutes. Allow to completely cool then put in the freezer for a few hours to help with the icing process.
Ice your 3 x layer cake with my creamy cream cheese icing and sprinkle the top with cinnamon. Yum!

My Favourite Simple Fruit Cake Recipe

This is my favourite go to recipe for delicious soft cake I've used the same recipe for marble cake, vanilla cake.
I'm using the all new baking margarine by BlueBand but if its not available where you are you can use butter or margarine of your choice.
INGREDIENTS:
300g Margarine
280g Sugar
5 eggs
380g Self Raising Flour
Vanilla essence
Dried Fruits of your choice

Ingredients:
2 cups white sugar
1 1/2 cup cooking oil
4 eggs
2 tsp. baking soda
2 cup flour
2 tsp baking powder
1 tsp salt
2 tsp cinnamon
3 cups raw shredded carrots
Cream cooking oil and sugar.
Add eggs and beat well.
Sift flour, baking powder, baking soda and cinnamon together.
Add to the creamed mixture and fold in carrots.
Divide in two prepared cake pans.
Bake in a preheated 350°F oven for 30-35 minutes.
CREAM CHEESE ICING.
1/2 lb. butter
8 oz. cream cheese
1 cup chopped nuts
2 cups powdered sugar
vanilla to taste.
Cream margarine and cream cheese.
Add vanilla and mix well.
Mix in powdered sugar until right consistency and smooth.
Let cake cool before frosting.
