How To make Broiled Potato Skins
4 Potatoes, lg
2 ts Margarine
- or 2 ts Butter; sofftened
1 c Cheese Montery Jack
- with Jalapeno Peppers 4 Bacon slices, crisp&crumbled
Prick Potatoes with fork to allow steam to escape. Bake potatoes in 425F oven until tender, about 1 hour. Cool slightly Cut each potatoe lengthwise into halves, scoop out insides, leaving a 3/8 inch shell. Spread inside of shells with margarine or butter, sprinkle with salt. Cut each potatoe into six pieces, sprinkle with cheese and bacon. Set oven control to broil or 550F. Broil potatoe pieces about 5 inches from heat until cheese is melted, about 2 minutes. Makes 48 appetizers.

- We didn't follow the ingredient amounts though, we just go by taste, so you can vary the amounts to your liking.
- We used soy sauce instead of salt.
- We boiled a corn cob, but you can use frozen or canned corn because it's faster and easier.
- You can add more BBQ sauce to the mixture than we did if you like... we had some more as a dipping sauce on the side.
- Cooking temperature may vary depending on your oven. We cooked at 250 degrees Celsius (482 Fahrenheit) for 20 minutes, then turned it down to about 200 degrees Celsius (392 Fahrenheit).
Cook the whole potatoes for about 60 minutes... until potatoes are totally cooked and a knife can go through them.
- We baked the potatoes for the second time on 200 degrees Celsius (392 Fahrenheit) for 30 minutes.
- We use a convection oven, or air fryer ( but it's the same as a regular oven.
TIPS:
- Pierce the potatoes with a knife so they don't explode when you cook them whole.
- Wait a few minutes for the potatoes to cool down before you scoop out the filling.

Potato Skins Ingredients:
8 small floury potatoes - such a Maris Pipers
6 rashers of streaky bacon
2 tbsp double/heavy cream whole milk is ok if you haven't got any cream
2 tbsp butter
pinch of salt and pepper
175 g (1 cup) of your favourite cheese I used a mix of 75% mature Cheddar and 25% red Leicester, grated
4 spring onions/scallions chopped
