How To make Bran Cereal Muffins
1 c Whole bran cereal
1 c Milk
1 Egg
1/4 c Oil
1/4 c Honey
1 1/4 c Whole wheat flour; unsifted
2 ts Baking powder
1/4 ts Baking soda
1/2 ts Salt
Preheat oven to 400 F (hot). Grease muffin tins. Stir bran cereal and milk together in a bowl. Let stand a minute or two. Add egg, oil, and honey. Beat well. Stir remaining ingredients together until well mixed. Add to liquid mixture and stir only until mixed. Put into muffin tins. Bake about 20 to 25 minutes or until lightly browned. ???? 1938 Depression Era Bran Muffin Recipe
Are you looking for a low sugar (but still sweet) oil free (but still super moist) Home made bran muffin recipe? Then this 1938 Depression Era Bran Muffin Recipe is for you! The recipe uses dates, but you could easily make these as a raisin bran muffin.
Ingredients:
250 mL (1 cup) thick, full fat sour cream
125 mL (½ cup) white sugar
1 egg
250 mL ( 1 cup) all purpose flour
5 mL (1tsp) baking soda
500 mL (2 cups) bran
5-6 dates, chopped
2 mL (½ tsp) salt
Method:
Preheat oven to 180ºC (350ºF)
Combine sour cream, sugar and egg until smooth.
Mix flour and baking soda, then mix into sour cream.
Mix in bran, salt, and dates.
Portion into a 12 cup muffin tin, and bake 20-25 minutes

Raisin Bran Muffins
375° 20 min
1 1/2 C All Bran Cereal
1 1/4 C Milk
1 1/4 C Flour
1 1/2 tsp Baking Powder
1/2 tsp Baking Soda
1/4 tsp Salt
1/3 C Molasses
1 Egg
1/4 C Vegi Oil
1/2 C Raisins
Soak cereal and milk in your mixing bowl and set aside.
Mix, flour,baking powder, soda, salt & raisins.
Once cereal is softened, add egg, oil & molasses, mix well. Slowly add dry ingredients, mix until well combined, try
not to over stir.
Grease muffin tins and fill approx 3/4 the way up.
Bake approx 20 min.
