Black Bean Soup
-1 pound dried black beans
-1 tablespoon olive oil
-2 to 3 carrots, peeled and diced
-2 celery ribs, diced
-1 onion, diced
-1 red bell pepper diced
-3 cloves of garlic minced
-1 bay leaf
-6 cups of chicken stock
-2 knorr chicken bouillon cubes
-salt and pepper to taste
-Toppings; Sour cream, sliced green onions, and shrimp sauteed in garlic butter if desired
Soak beans in water for 6 hours, changing the water 2 to 3 times.
In a stock pot heat olive oil and add onions cooking a few minutes to softened. Add celery, carrots, red bell pepper, bay leaf, chicken bouillon cubes and pepper, coo another 10 minutes. Add chicken stock, bring to a simmer, cover and cook until beans are soft. Remove bay leaf, and using stick blender puree soup. Taste for salt. Garnish as desired.

Spicy Black Bean Soup - Lynn's Recipes
A quick black bean soup that is great for a lunch or a quick dinner. Healthy and very easy to make.
Spicy Black Bean Soup
1 Tablespoon olive oil
1 small onion, chopped (about 1 cup)
3 cloves garlic, minced
1 chipotle pepper in adobo sauce, chopped (opt.)
1 teaspoon chili powder
½ teaspoon cumin
3 cups vegetable broth or stock
2 (15 ounce) cans black beans, rinsed and drained
¼ teaspoon ground black pepper
Pinch of cayenne pepper
Sour cream and cilantro for garnish
In a large saucepan, heat olive oil over medium heat. Add onion and garlic and cook for about 5 minutes until the onion is softened. Add chili powder, cumin cayenne pepper, black pepper and chipotle pepper. Cook for about 1 minute, stirring. Add stock and 1 can of beans and bring to a boil.
Meanwhile, in a food processor, (or alternately, you can use a potato masher or even a fork) puree the remaining can of beans and add to pot. Reduce heat and simmer for 10-15 minutes. Ladle soup into serving bowls and garnish with sour cream and cilantro, if desired.

8 cups fresh cold water
On high heat bring beans and water to a boil. Reduce heat to simmer. Cover bean and cook for 1 hour.
In large skillet on medium heat add...

1/2 cup green pepper. chopped
2 bay leaves
!/2 cup sherry cooking wine
1 tablespoon apple cider vinegar
Saute until browning begins to develop around onion edges...5-8 minutes. Add to black beans. Simmer for 1 more hour. Add...
2 teaspoon kosher salt
1/2 teaspoon fresh black pepper
Remove from heat for 1 hour.
Remove bay leaves and puree some for the black beans for a hearty soup.
Return beans back to medium heat to warm. Serve.
Tips: Serve over cooked rice, puree to make Black Bean Dip.
