How To make Beef~ Pepper & Mushroom Kabobs
: 1 lb Boneless beef top sirloin : -steak, cut 1-1/4" thick (or : -boneless chicken : -cubes or boneless pork : -cubes) : 1 md Green, red or yellow bell : -pepper, cut into 1-1/4" : -pieces : 2 tb Olive oil : 1 tb Lemon juice : 1 tb Water : 2 ts Dijon-style mustard : 1 ts Honey : 1/2 ts Dried oregano leaves, : -crushed : 1/4 ts Pepper : 12 lg Mushrooms : Salt, if desired Trim excess fat from beef top sirloin steak; cut steak into 1-1/4" pieces. Whisk together oil, lemon juice, water, mustard, honey, oregano and pepper in large bowl. Add beef, bell pepper and mushrooms, turning to coat. Alternately thread beef, bell pepper, and mushrooms on each of four 12" metal skewers. Place kabobs on rack in broiler pan so surface of meat is 3 to 4" from heat. Broil 9 to 12 minutes for rare to medium, turning occasionally. Season with salt, if desired. Makes 4 servings. Stuffed Steak Rolls
Here is what you will need!
Makes 6
Ingredients
2 tablespoons canola oil, divided
3 tablespoons chopped garlic
2 sweet onions, such as Vidalia, chopped
2 cups mushrooms, thinly sliced
½ tablespoon kosher salt
½ tablespoon freshly ground black pepper
2 pounds flank steak
Kosher salt
Freshly ground black pepper
1 (4-ounce) package baby spinach
9 slices Provolone cheese
Preparation
Preheat oven to 350° Fahrenheit.
Heat 1 tablespoon of the oil in a pan over medium-high heat. Combine the garlic, onions, mushrooms, salt, and pepper in the pan and cook until almost all of the moisture has evaporated and the onions are caramelizing, 15-20 minutes. Remove from heat and set aside.
Lay the flank steak on a cutting board. Spoon the mushroom and onion mixture on top, spreading it evenly across the steak. Sprinkle the spinach on top, followed by the slices of Provolone. Press down lightly to compress the spinach. Starting at the bottom of the flank steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use 6 toothpicks to secure the steak roll. Slice the steak roll into 6 equal rolls.
Heat the remaining oil in a pan over high heat. Sear the steak rolls on one side for 1-2 minutes, then flip. Sear the second side for about 1 minute, then bake for 10-15 minutes, until medium-rare.
Remove the toothpicks, then serve!

Steak Mushroom and Pepper Kabobs

GRECIAN NEW YORK STRIP STEAKS & MUSHROOM KABOBS
INGREDIENTS:
2 US Beef New York Strip Steaks Boneless, 300 grams each
400 grams medium mushrooms
1 medium red onion, cut into wedges
2 tablespoons olive oil
6 lemon wedges
1/4 cup crumbled feta cheese (optional)
Lemon Pepper Rub:
1 tablespoon minced garlic
2-1/2 teaspoons lemon pepper
1-1/2 teaspoons dried oregano leaves
COOKING:
Combine Lemon Pepper Rub ingredients. Combine mushrooms, onion, oil and 2 teaspoons rub in medium bowl; toss. Alternately thread mushrooms and onion onto six 20 cm metal skewers. Finish with a lemon wedge.
Press remaining rub onto beef Strip Steaks. Place steaks and kabobs on grid over medium, ash-covered coals. Grill steaks, covered, 11 to 14 minutes (over medium heat on preheated gas grill, 11 to 15 minutes). Grill kabobs 6 to 8 minutes or until mushrooms are tender, turning occasionally.
Remove vegetables from skewers; toss with cheese, if desired. Carve steaks into slices. Season beef and vegetables with salt, as desired.

Do not reuse marinades used on raw foods.
