peanut butter for 1/4 cup butter. After chilling, roll out dough to 1/4-inch thickness; cut into 2-inch thickness; cut into 2-inch scalloped
rounds. Using handle of wooden spoon, make shallow depression across center of each. Bake 8 to 10 minutes. Makes about 2 1/2 dozen.
4. ORANGE-CHOCOLATE CHIPPERS: Stir 1 tbsp. grated orange peel and 1
pkg. semi-sweet chocolate chips into dough. Drop unchilled dough by tablespoonfuls; bake 8 to 10 minutes. When cool, brush lightly with orange marmalade. Make about 4 dozen. 5. APPLE PIE SQUARES: Increase baking powder to 1 tsp.; stir 1/2 cup
chopped walnuts into dough. Pat dough into greased 9-inch square baking pan; press back of teaspoon into dough to make 36 indentations. Fill indentations with 1/2 cup applesauce flavored with 1/4 tsp. each nutmeg and cinnamon. Bake 40 to 45 minutes until firm to touch. Cool in pan. Drizzle with Quick Confectioners' Icing, (see recipe below); cut into 1/2 inch squares. Makes 3 dozen. -----

I figured out delicious keto thumbprint cookies and wanted another cookie to add to the video and I really wanted to do a traditional Italian Christmas cookie. I really wanted to make Italian cucidati cookies but they have a bunch of ingredients not good for keto but maybe when I get pregnant and do more low carb I will attempt a recipe for next Christmas!! I saw pictures of chocolate dipped Italian butter cookies and thought they looked amazing so I got to work. Crispy on the outside, soft and buttery in the middle so yummy!!!

Brown Butter Pecan Chocolate Chip Cookies

Things you will need
sheet pan or cookie sheet
parchment paper ( not wax paper )
Saran Wrap
measuring spoons and cups
1 large bowl
1 ice cream scooper
medium pot
whisk
rubber spatcular
Preheat oven to 350
INGREDIENTS:
2 sticks butter
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
1 tbs vanilla extract ( imitation vanilla is fine )
1 teaspoon kosher salt or table salt
1 teaspoon baking soda
3 teaspoon cornstarch
-2 cups all purpose flour plus two tablespoons
-1 1/2 cups semi sweet chocolate chips ( you canadd chocolate chunks if you want, plus more for topping )
-1 cup chopped pecans or walnuts ( plus more for topping )
* 1 ice cream scooper *
Note* if you decided to use a smaller scooper instead of the 2 1/4 scooper like I did .. please adjust cooking time. Bake cookies for 8 mins instead. * Please understand that the cookies will seem a bit under cooked once removed from the oven, but dont be alarmed they will Harden as they cool *
* Please cook larger cookies for 9-10 mins (same size as cookies in v video *
*
*if using a mini scooper bake cookies for 6-7 mins *
* you can also freeze this cookie dough to use at a later time *

extra sugar for flattening
350° for 12-15 minutes
