Ingredients
1 Egg
1/4 Cup Melted Coconut Oil
1/2 Cup Maple Syrup
2.5 Cups Almond Flour
3 tbsp Baking Cocoa
1/4 tsp Baking Soda
1/4 tsp Sea Salt
1/2 tsp Ginger
1/4 tsp Cinnamon
1/8 tsp Nutmeg
Sugar Mixture
1/2 Cup Sugar
1/2 tsp Cinnamon
1/2 tsp Ginger
Mix together egg, coconut oil and maple syrup (all of them- room temperature). In separate bowl mix almond flour, cocoa, baking soda, salt, ginger, cinnamon and nutmeg until combined. Add dry mixture into wet ingredients and make a dough. Refrigerate dough for 20 minutes. Mix coconut sugar, cinnamon and ginger in small bowl. Roll dough into walnut sized balls then roll balls in sugar mixture. Transfer to a rimmed baking sheet lined with parchment paper. Gently press down on each cookie ball to flatten slightly. Bake at 350F for 15 minutes then let it cool.

I use crystallized ginger that comes as a gift from olive nation company.
Round shaped sliced ginger can be eaten this way as a snack, I can say I like it.
It has a fragile texture, I did not think of ginger as a sweet snack, I have to say it burns a little throat, and I read that it is a healthy natural product.
ingredients for cookies, 60 grams of margarine and a little salt
1 egg
3 spoons of yoghurt
half a glass of sugar
3 spoons of oil
1 spoon of lemon juice
5 grams of powdered vanilla
1 teaspoon of baking soda
Can be 2.5 glasses of flour or up to 3 glasses
remove the ingredients from the refrigerator beforehand and it will be good to be at room temperature
Baked at 180 degrees and 15 minutes, it may vary in other ovens, I can say that I did not preheat the oven.
For example, if I had preheated the oven, the cooking time would have been shorter and it would have taken 11 minutes.

Ingredients for Gingerbread
-100 g all purpose flour.
-130 g brown sugar.
-120 g softened butter 80% fat.
-1 egg.
-3 tbsp caramelised sugar, diluted in 80 ml water.
-1 tsp salt.
-2 tsp ground ginger.
-2 tsp ground cinnamon.
-1/2 tsp baking soda.
-3/4 tsp ground cloves.
-1/2 tsp ground nutmeg.
Ingredients for frosting
-1 egg white.
-500 g fine powder sugar.
-1 tsp turmeric powder.(for yellow color)
-2 tsp of caramel water.(for light caramel brown color)
-1 tsp of blue food coloring.
Method for frosting
Whisk together the powdered sugar and egg white until smooth and silky. It takes a few minutes.You can thin with water from here (one teaspoon at a time) depending on your preference.
You can also add any coloring you like at this point. Use a brush (or piping bag) to paint the icing on the cookies, allow to dry completely.
00:20 - Slice butter.
00:23 - Add brown sugar.
00:28 - Mix together.
00:36 - Add egg and mix.
00:42 - Mix until a smooth paste is formed.
00:47 - Add liquid caramelised sugar and mix.
00:54 - Add spices(1 tsp salt, 2 tsp ground ginger, 2 tsp ground cinnamon, 1/2 tsp baking soda, 3/4 tsp ground cloves, 1/2 tsp ground nutmeg into flour.
00:56 - Mix together.
01:18 - Mix together and keep adding flour step by step until combined with the butter mix.
01:28 - Homogeneously mixed dough.
01:31 - Compact it into a dough disc and let it cool in the refrigerator for at least 1 hour.
01:41 - Place dough between two stretch foils.
01:56 - Use a rolling pin to flatten it. (0,5 mm thick)
02:15 - Use gingerbread molds to obtain figurines.
02:20 - Preheat oven to 350°F (177°C) and bake cookies for about 9-10 minutes.
02:26 - Let the gingerbread cool off before adding the frosting.

Ingredients
1 c of packed brown sugar
3/4 c vegetable oil
1/4 c molasses
1 egg
1 c AP flour
1 c whole wheat flour
2 tsp baking soda
1/4 tsp salt
1 tsp cinnamon
1/2 tsp ginger
1/4 c raw sugar
Directions
1. Preheat oven to 375°F
2. In a large bowl, mix together the brown sugar or molasses and egg. Combine the flour, baking soda, salt, cinnamon, and ginger; stir it into the molasses mixture. Roll dough into 2 inch balls. Roll each ball in raw sugar before placing 2 inches apart on ungreased cookie sheets. (I used parchment paper)
3. Bake for 6 to8 minutes in a preheated oven or until edges are firm but not very brown cookies will be chewy.
4. Enjoy!

White Sugar 42g
Brown Sugar 42g
Whole eggs 28g
All purpose flour 142g
Baking soda 4.2g
Ginger powder 0.7g
Cinnamon powder 1.4g
Salt 0.4g
Molasses 48g
1. All ingredients at 20~22℃
2. Beat the butter smooth.
3. Add white sugar/brown sugar and beat.
4. Add the eggs in several additions.
5. Sift in the powder ingredients and add the molasses.
6. Split the dough into 40~45g each, roll the dough into a rough ball and roll it in light brown sugar.
7. (Preheat 180℃) Bake at 180℃ for 10~11mins.
Store at room temp. up to 5 days.
