How To make Barbecued Pork Steaks 2
4 pork blade steaks -- cut 1 to 1 1/4 inches thick
1/2 cup bottled barbecue sauce
1/3 cup honey
1 tablespoon Worcestershire sauce
1 teaspoon garlic salt
1/2 teaspoon prepared mustard
Pound steaks with meat mallet. For sauce, in a small bowl, combine the remainin g ingredients; mix well. Place steaks on grill about 4 inches above medium-slow coals. Cook about 8 minu tes on each side. Brush steaks with sauce and continue cooking 5 minutes more, turning and brushing with sauce.

Barbecue Pork Chops with Grilled Zucchini and Smashed Sweet Potatoes Recipe
- 4 center cut, boneless pork loin chops 1” thick
- 2 Tablespoons Killer Hogs AP Seasoning
- 1 Tablespoon Killer Hogs The BBQ Rub
- 2 Tablespoons olive oil
- 1/4 cup Captain Rodney’s Boucan Glaze
- 4 zucchini squash
- 3 large sweet potatoes
- 1/2 stick butter
- 2 Tablespoons heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
Directions
1. Preheat oven to 425 degrees. Place sweet potatoes on middle rack and roast for 40-50 minutes or until fork tender.
2. Prepare charcoal grill for two zone cooking.
3. Drizzle chops on all sides with 1 Tablespoon olive oil. Season with AP Seasoning and The BBQ Rub.
4. Sear chops for 3 minutes each side and move to the cool side of the grill. Drizzle with Captain Rodney’s Glaze and cook until internal temperature reaches 135-138 degrees; rest for 5 minutes before serving.
5. Trim the ends and quarter the zucchini squash. Drizzle with remaining olive oil and season with AP seasoning.
6. Grill zucchini on hot side of grill about 6 minutes. Turn every two minutes for even grilling.
7. Cut the sweet potatoes in half and squeeze out of peel into a large mixing bowl. Add butter and mash sweet potatoes. Add heavy cream and season with salt, black pepper, and cayenne. Stir to combine until potatoes are creamy.

Making PERFECT St. Louis Style BBQ Pork Steaks
This delicious grilled St. Louis Pork Steak recipe is reverse seared and then basted with homemade BBQ sauce and charred to perfection. If you’ve never had these before, you will be blown away at how delicious they are.
Pork steaks are an absolute St. Louis BBQ staple. They are thin-cut pork butt or shoulder steaks grilled until done and basted with a tomato-vinegar BBQ sauce. The most common cooking method would be to quickly char them on both sides and then slow cook them for a few hours in BBQ sauce.
While you can cook these using any procedure you’d like, I believe reverse searing them makes them the most tender and juicy without the risk of overcooking. Check out my video below to see how I made them.

Ingredients for this recipe:
For the Pork Steaks:
• 8 ½” to 1” thick cut pork steaks
• 4 teaspoons onion granules
• 4 teaspoons garlic granules
• 4 teaspoons dry oregano
• sea salt and pepper to taste
• 2 cups BBQ sauce
For the Optional Homemade BBQ Sauce
• 28 ounce can of tomato puree
• 2/3 cup white distilled vinegar
• ¼ cup light or dark corn syrup
• ¼ packed light brown sugar
• 1 tablespoon Worcestershire sauce
• 1 tablespoon dark molasses
• Juice of 1 lemon
• ½ cup orange juice
• ¼ cup soy sauce
• 4-6 dashes of hot sauce
• 2 ½ teaspoons sea salt
• 1 teaspoon black pepper
• 2 teaspoons onion granules
• 2 teaspoons garlic granules
• 3 tablespoons tomato paste
