How To make Banana Oatmeal Muffins
1/4 c Butter or margarine softened
3/4 c Brown suger packed
1 Egg beaten
1 c Buttermilk
1 c Rolled oats
1 c All-purpose flour
1 tb Baking powder
1/2 ts Salt
1/2 ts Allspice
2 md Bananas chopped
1. Cream together butter and brown suger. Mix in egg and buttermilk.
2. Mix together oats, flour, baking powder, salt and allspice.
Add to creamed mixture. 3. Stir in Bananas.
4. Spoon into greased or paper lined muffin pan, filling almost full.
5. Bake at 400 to 425 degrees for 20 to 25 minutes until golden brown.
Per Serving Calories 162 Protein 3.5g Fat 5.1g Carbohydrates 26.4g Sodium 242mg Tips: For variation, add 1 cup chopped fresh peaches in place of the bananas. Or use 1 can chopped mixed fruit.

BAKED BANANA OATMEAL CUP RECIPE
3 cups rolled oats
2 teaspoons baking powder
1 teaspoon cinnamon
1/8th teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 cup mashed banana (2-3 bananas depending on their size)
2 pastured eggs
1.5 cups of unsweetened almond milk (or any milk you prefer)
2 tablespoons mini chocolate chips
Preheat oven to 350 degrees F.
Spray a 12-cup muffin tin with cooking spray or coat it with coconut oil or butter.
In a large bowl combine oats, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl mix together mashed bananas, eggs, and milk until well combined.
Pour the milk mixture over the oat mixture and stir well to combine.
Evenly divide the oat mixture between all 12 muffin cups and then top each one with a sprinkle of chocolate chips.
Bake for 20-25 minutes or until set and cooked through. Allow to cool and then store in an airtight container in the fridge for up to a week.
Recipe Notes
*I like these muffins best warm or room temperature so if I am eating them from the fridge, I will either heat them in the microwave for 30-45 seconds or pop them in the toaster oven until warm.
*I rely on bananas to keep this recipe naturally sweet. If you like a sweeter flavor you can add a couple of tablespoons of brown sugar or coconut sugar along with the dry ingredients.
I top each muffin with chocolate chips because my kids demand them. Feel free to use other mix-ins like blueberries, walnuts, raisins, or raspberries. Stirring them into the batter is certainly an option if you want more flavor through the muffin cup.

Ingredients:
Banana - 2 (295 g)
Egg - 1 ( L )
Milk - 150 ml
Vanilla extract - ½ tsp
Honey - 2 tbsp
Cinnamon powder - ¼ tsp
Rolled oats - 1 ½ cup (120 g)
Baking powder - 1 tsp (4 g)
Salt - ¼ tsp
Made 6 muffins
Bake in preheated oven (170°C) for 20 - 25 mins

12-14 servings
Ingredients:
3¼ cups (350g) rolled oats
½ cup honey/maple syrup/date syrup (170g)
2 tsp baking powder
2 eggs
1 cup mushed bananas (about 3 large bananas)
1 cup milk
1 tsp vanilla extract
½ tsp salt
Dark chocolate chips for topping (optional)
Directions:
1.Preheat oven to 360f/180c
2.In a large bowl mash bananas, add eggs, milk, honey and vanilla extract. Whisk all together.
3.In another bowl add rolled oats, baking powder and salt. Mix well.
4.Combine together wet and dry ingredients, mix just until combined.
5.Put paper muffin cups into muffin tin (optional) and spry the paper muffin cups with cooking oil.
6.Divide the batter evenly between the muffin cups, top with chocolate chips.
7.Bake for 25-30 minutes until muffins are just golden brown.
8.Place the muffins on a cooling rack to cool for 15 minutes.
