How To make Bacon& Cheddar Drop Biscuits
1/4 cup onion
finely minced
4 slices crisply cooked bacon :
finely minced
(reserve 2 tablespoons of bacon fat) 1 3/4 cups flour
2 teaspoons double-acting baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons cold vegetable shortening
3/4 cup extra sharp Cheddar cheese -- coarsely grated
2/3 cup milk
In a skillet, cook the onion in the reserved fat over moderately low heat, stirring, until it is softened; let mixture cool. In a small bowl combine the onion mixture with the finely minced (do this in a food processor) bacon; season with freshly ground pepper. Into a bowl, sift together the flour, the baking powder, the baking soda, and the salt. Add the shortening and blend the mixture until it resembles coarse meal. Stir in the bacon mixture and the Cheddar; add the milk and stir the mixture until it just forms a soft sticky dough. Drop the dough by rounded tablespoons onto a buttered baking sheet. Bake the biscuits in the middle of a preheated 425 oven for 15 to 17 or until pale golden brown. Makes about 16 biscuits.

Drop Biscuits have a beautiful golden brown crust that is nice and crispy. Yet when you split one in half, inside it is wonderfully soft and tender. These biscuits are so easy to make; no kneading, rolling, or shaping the biscuits. All you do is mix the ingredients together with a fork, and then 'drop' the batter by heaping spoonfuls onto you baking sheet. Serve the biscuits with soups or stews, or cut in half and spread with butter and jam and/or clotted cream. These also make a great Breakfast Sandwich; just cut in half and fill with a slice of cheese, a bacon or sausage patty, and a fried or scrambled egg. They also make a delicious Strawberry Shortcake.

Bacon Cheddar Drop Biscuits
2 Cups Flour
1 TBSP baking powder
1 1/4 TSP Salt
1 Stick cold butter ( cut it into small pieces )
1/2 cup shredded cheddar cheese
1/2 cup Cooked Bacon ( Chopped)
3/4 cup Milk
1 ) Preheat oven at 450 degrees
2) Mix Flour ,Baking Powder , Salt
3) Add Butter and mix told crumbly
4) Add Cheddar and Bacon and mix
5) Add Milk slowly and mix to combine
6) Use cup to scoop out and drop on sheetpan
7) Bake at 450 degrees 18 to 22 minutes until golden brown for smaller biscuits 16 minutes

After many rounds of trial and error, I can confidently say these are my favorite biscuits. They oh-so-buttery, flaky and perfectly tender. Jazz up your biscuits and add cheese and bacon (why not?!).
