COOKIE BAR:
1 c All-purpose flour
1/2 c Packed brown sugar
1/2 ts Baking powder
1/4 ts Baking soda
1/4 ts Ground cardamom
Or 1/8 tsp. ground cloves 1/2 c Apricot nectar or orange
Juice 1/4 c Unsweetened applesauce
2 tb Cooking oil
1 Slightly beaten egg
1/2 c Finely snipped dried apricos
1 Recipe Apricot Icing
APRICOT ICING:
1/2 c Powdered sugar
2 To three teaspoons apricot
Nectar or orange juice In a medium mixing bowl stir together flour, brown sugar, baking powder, baking soda, and cardamom or cloves; set aside. Stir together apricot nectar or orange juice, applesauce, oil, and egg till combined. Sit in the snipped apricots. Spread batter in an ungreased 11x7x1-1/2-inch baking pan. Bake in a 350-degree oven about 25 minutes or till a wooden pick inserted near the
center comes out clean. Cool in pan on a wire rack. Drizzle with Apricot Icing. Cut into bars. Makes 24 bars. APRICOT ICING: In a small mixing bowl stir together 1/2 cup powdered sugar and 2 to 3 teaspoons apricot nectar or orange juice. Ingredients - For the cake
* 150g ready to eat dried apricots
* 250 ml cold water
* 3 cardamom pods (deseeded)
* 200g ground almonds
* 50g fine polenta
* 1 tsp baking powder
* 150g sugar
* 6 large eggs
* 2 tsp lemon juice
* 1 tsp rosewater
To Decorate
* 2 tbsp apricot jam
* 1 tsp lemon juice
* 1 tsp rosewater
* 4 tbsp crushed pistachios
Method
You will need: 1 x 20cm/8-inch round springform cake tin
1. Put the dried apricots into a small saucepan, cover them with the cold water, and drop in the cardamom seeds. Put on the heat, then bring to the boil and let it bubble away for 10 minutes – keep a close eye to make sure it doesn’t actually run out of water.
2. Take the pan off the heat and let the apricots cool. Preheat the oven to 180 °C/160 °C Fan/Gas mark 4. Grease your springform cake tin and line the bottom with baking parchment.
3. Remove 5 of the dried apricots and tear each one in half, then set aside for later to decorate the top of the cake.
4. Pour out the sticky contents of the pan into the bowl of a food processor. Add the ground almonds, polenta, baking powder, sugar and eggs, and blitz well to combine.
5. Open the top of the processor, scrape down the batter, add the lemon juice and rosewater, and blitz again, then scrape the batter into the prepared tin and smooth with a spatula. Arrange the apricot halves around the circumference of the tin.
6. Place in the oven and bake for 50 - 60 minutes. If the cake is browning up too quickly before it’s actually ready, you may want to cover loosely with foil. When the cake is ready, it will be coming away from the edges of the tin, the top will feel firm, and a toothpick inserted in the middle will come out with just one or two damp crumbs on it.
7. Remove the cake to a wire rack. Warm the apricot jam so that it’s easier to spread. Stir in the lemon juice and rosewater into the jam and brush over the top of the cake, then sprinkle with some of the crushed pistachios and leave the cake to cool in its tin. Once cooled and easy to handle remove the cake from the tin and spread more of the apricot jam on the sides of the cake and decorate with the remaining crushed pistachios. The cake is now ready to be transported to a serving platter.
