How To make Apricot Bars
1 c White flour
1/3 c Brown sugar
1 ts Cinnamon
1/2 ts Baking powder
1/4 ts Salt
1 1/2 c Dried apricots
1 tb Walnuts, chopped
1 tb Cashews, chopped
1/3 c Maple syrup
ICING:
1 c Icing sugar
2 tb Shortening
1/2 ts Vanilla
1 tb Apple juice
Sift together flour, sugar, cinnamon, baking powder & salt. Stir in the apricots & nuts. Add the syrup. Stir until the mixture forms a thick batter. Spread the batter into a lightly oiled 8" X 8" baking pan (it is hard work, but it will cover -- trust me!). Bake at 350F for 30 to 35 minutes or until the bars test done. Allow to cool slightly, cut into bars. When completely cool, spread with icing & drizzle some melted chocolate over the top if desired. ICING: Cream together sugar & shortening. Add remaining ingredients & beat until smooth. Makes 1/2 cup. Recipe by Mark Satterly

1 egg
1 tsp vanilla extract
Bake in preheated oven 180℃ For 30-35 minutes.

Dark Chocolate Apricot Energy Bars
Dark Chocolate Apricot Breakfast Bars
Serving: 12 bars
INGREDIENTS
1 cup puffed rice
½ cup oats
½ cup pumpkin seeds
1 ⅓ cup almonds, roasted
½ cup dried apricot, diced
⅓ cup corn syrup
½ cup honey
1 teaspoon vanilla extract
1 bar dark chocolate
PREPARATION
Combine puffed rice, oats, rice, and apricot into a large bowl.
In a sauce pan, heat corn syrup and honey until it reaches 260°F/126°C. Then carefully add vanilla extract and remove from heat.
Immediately pour the honey mixture into the bowl, stir, and transfer it onto a parchment paper–lined baking sheet.
Using a spatula press down the mixture to desired thickness. (Careful - it may still be quite warm!)
Refrigerate for 30 minutes.
Heat 1 bar of dark chocolate for 1 minute, then drizzle over the top. Refrigerate for 30 minutes.
Remove parchment paper and cut into 12 even pieces.
Wrap each bar with wax paper and store up to 1 week.

HOMEMADE ENERGY BARS RECIPE
(makes 12 pieces)
Ingredients:
1 cup dates (130g)
1/2 cup dried apricots (80g)
1/2 cup prunes (80g)
1/2 cup cashews (70g)
1 cup desiccated coconut (60g)
1-2 tbsp ground oats (optional)
NUTRITIONAL INFO (per piece):
129 calories, fat 6g, carb 19.7g, protein 2g
Preparation:
Soak the dates and dried apricots in hot water for 10 minutes.
Use the food processor to grind the cashew nuts first.
Add the soaked dates and apricots, together with prunes, and blend 1-2 minutes until smooth.
Add the cocoa powder and desiccated coconut and blend one more time to combine. If the mixture is too sticky, add 1-2 tbsp ground oats.
Spread the mixture on a lined baking tray, press with hands and smooth the top.
Place in the fridge or freezer to firm up.
Cut into bars or bite sized pieces and store in the fridge.
