Nature’s Garden Apricot Almond Shortbread Bars
Nature’s Garden Apricot Almond Shortbread Bars are the perfect sweet treat. These bars are buttery and delicious, we are sure they will be a hit with anyone who tries them.
Nature’s Garden Probiotic Apricots are enhanced with ten billion cfu clinically researched Probiotics Lactobacillus Rhamnosus GG and Saccharomyces Boulardii.
Also Nature’s Garden Probiotic Apricots are a good source of Vitamin A and E, potassium, and fiber. There are Nature’s Garden Sliced Almonds in these Shortbread Bars as well, which contain calcium, iron, protein, and potassium.
There is butter, sugar and flour in this recipe which definitely makes it decadent, however you might feel a little better knowing how many nutrients are packed in these bars too!

You will need to buy two bags of Nature's Garden Organic Turkish Apricots for this recipe, and use them all so you have enough apricot filling.

1/26/21 update: I prefer grating/crumbling half the cold dough into the pan and pressing down gently and use a little of the second half of dough to fill in any holes. (See recipe link above) This makes a lighter, crisper texture.
You can use raspberry, strawberry, or any other jam or preserves. The tartness of the jam balances the sweetness of the buttery cookie.
In South Africa these were called farfel biscuits because the grated dough looks like little pellets or flake-like noodles. Adapted from The New International Goodwill Recipe Book.
Bake in a round pan and slice into wedges to make it more like a cake.

Lila's Apricot Almond Granola Bars
2014 GRAND PRIZE WINNER
Daughter and Dad duo, Lila and Ben, are at it again only this time Lila's in charge! When we first started shooting these videos Lila was only two ( and just getting a taste for the joy of cooking. Now that she's six, things have certainly changed!
With the help of a recipe from Mark Bittman ( we're making all-natural, Apricot Almond Granola Bars. Now when the snacking bug bites, Lila can proudly fetch a treat she's made almost all on her own! A great way for kids to take ownership of their hunger.

INGREDIENTS
1 cup granola
1/2 cup almonds, chopped
1/2 cup dried apricots, chopped
1/2 cup almond butter or other nut butter
1/2 cup honey
1 cup crispy brown rice cereal
1/4 teaspoon salt
Vegetable oil for greasing
INSTRUCTIONS
1. Put almond butter and honey in a small saucepan over medium heat for 2 to 3 minutes or until they melt together; whisk to combine.
2. Put the crispy cereal, granola, almonds, apricots and salt in a bowl and add the mixture of almond butter and honey; stir well to combine.
3. Grease a 7- or 8-inch-square baking dish with a little oil and line it with plastic wrap. Spread the granola mixture evenly into the dish, pressing down gently, and cover with more plastic wrap; refrigerate until set, at least one hour. Once set, remove by lifting the edges of the plastic wrap out of the dish; peel off the plastic and cut the bars to any size you like.
Yield: about 16 to 20 granola bars.
