How To make Pancakes Griddle Cakes Or Batter Cakes
1 1/2 c All-Purpose Flour
1 t Salt
3 tb Sugar
2 Eggs
3 tb Butter, Melted
1 1/4 c Whole Milk
THESE NAMES ALL REFER TO THE SAME ITEM - THE FAMILIAR WHEAT FLOUR brEAKFAST PANCAKE. Sift the flour before measuring. Resift with the salt, sugar and baking powder. Beat the eggs lightly and combine with the melted butter and milk. Mix the liquid ingredients quickly into the sifted ingredients. Cover and refrigerate for at least 4 hours (the longer the better). Preheat the griddle. The griddle is ready when a drop of cold water skitters about on the surface of the griddle for several seconds before evaporating. Use a tablespoon to gently spoon the batter onto the griddle. When bubbles appear on the top of the griddle cakes, check the underside of to see how they are doing. Turn when golden brown. The second side will take only about half as long as the first to cook. Serve hot with syrup, bacon, sausages, etc.

MIX INSTRUCTIONS:
1️⃣ 00:00:50 - In a large mixing bowl, stir together flour, powdered milk, sugar, baking powder, baking soda, and salt.
2️⃣ 00:01:25 - Store in a large airtight container at room temperature.
COOKING INSTRUCTIONS:
1️⃣ 00:01:41 - When ready to make pancakes, preheat nonstick griddle to medium high heat. For every 1 cup of pancake mix, whisk with 3/4 cup water. 1 cup of mix makes 4 to 5 pancakes.
2️⃣ 00:01:55 - Scoop 1/4 cup of pancake batter onto griddle. Let pancakes cook until bubbles form before flipping. Flip and cook other side until golden brown. Serve hot with syrup.

The ingredients are same as a regular pancake, but the procedure is quite different.

<cake batter base>
1 egg yolk
1 teaspoon (5g) granulated sugar
2 tablespoon(20g) whole milk
1 tablespoon(10g)flavorless vegetable oil

My pancake is not fluffy as shown in the video. What is the problem?
A.
There are 3 possible reasons.
1. The meringue is not stiff enough or being rough. I mean, the meringue have to be stiff and dense at the same time.
2. Added too much baking powder. In that case, the cake should rise but shirnk badly.
3.Flip it over before cooked.
Keep that mind and try again!
