Most delicious carrot cake. I made this and wanted it to be the most moist and delicate and it turned out to be one! The combination of carrots , dried apricot, toasted walnut and touch of cinnamon was just incredible. And with the cream cheese frosting it was match made in heaven. Yum!!!

Old Fashioned Carrot Cake
In this retro recipe, we're bringing you old fashioned carrot cake, courtesy of our grandmothers. This moist, delicious cake is perfect for Easter holidays or any other occasion that calls for a southern cake.
Carrot cake is one of the most popular desserts around, and this recipe is sure to please. With its moist texture and delicious flavor, this cake is perfect for any Easter celebration! Ingredients:
2 cups white sugar
1 1/2 cup cooking oil
4 eggs
2 tsp. baking soda
2 cup flour
2 tsp baking powder
1 tsp salt
2 tsp cinnamon
3 cups raw shredded carrots
Cream cooking oil and sugar.
Add eggs and beat well.
Sift flour, baking powder, baking soda and cinnamon together.
Add to the creamed mixture and fold in carrots.
Divide in two prepared cake pans.
Bake in a preheated 350°F oven for 30-35 minutes.
CREAM CHEESE ICING.
1/2 lb. butter
8 oz. cream cheese
1 cup chopped nuts
2 cups powdered sugar
vanilla to taste.
Cream margarine and cream cheese.
Add vanilla and mix well.
Mix in powdered sugar until right consistency and smooth.
Let cake cool before frosting.

Ingredients:
For the cake:
• 2 cups all-purpose flour
• 2 teaspoons baking powder
• 1 1/2 teaspoons baking soda
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground ginger
• 1/2 teaspoon ground nutmeg
• 1/2 teaspoon salt
• 1 cup vegetable oil
• 1 cup granulated sugar
• 1 cup brown sugar
• 4 large eggs
• 2 teaspoons vanilla extract
• 3 cups shredded carrots (about 6-7 medium carrots)
• 1 cup chopped walnuts or pecans (optional)
Instructions:
1. Preheat the oven to 350°F (180°C). Grease two 9-inch round cake pans with butter or cooking spray, then dust with flour.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
3. In a large mixing bowl, whisk together the oil, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Don't overmix.
5. Stir in the shredded carrots and chopped nuts (if using) until evenly distributed.
6. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
7. Bake for 30-35 minutes or until a toothpick inserted in the center of the cakes comes out clean.
8. Allow the cakes to cool in the pans for 5 minutes, then transfer them to a wire rack to cool completely.
9. To make the cream cheese frosting, beat the butter and cream cheese together in a large mixing bowl until light and fluffy.
10. Gradually add the powdered sugar and vanilla extract, beating until smooth and creamy.
11. Once the cakes are cool, spread a generous layer of frosting on top of one cake. Place the other cake on top and spread frosting over the top and sides of the cake.
12. Serve the cake immediately or store it in the refrigerator for up to 5 days.

This is my favourite go to recipe for delicious soft cake I've used the same recipe for marble cake, vanilla cake.
I'm using the all new baking margarine by BlueBand but if its not available where you are you can use butter or margarine of your choice.

50g brown sugar (1/4 cup)

Cream cheese frosting
200g cream cheese (room temperature) (7 oz or 1/2 lb)
100g softened butter (1/3 cup)
100ml heavy cream (1/2 cup)
100g powdered sugar (1 cup)
