Making Antoine's Irish Soda Bread
Antoine's version of 'Amazingly Easy Irish Soda Bread'
· 2 cups unbleached flour with 2 cups whole wheat flour;
optionally, ½ cup oat bran or ½ cup 3-5 minute oatmeal (a little more buttermilk needed)
· 4 tablespoons white sugar
· 1 teaspoon baking soda
· 1 tablespoon baking powder
· 1/2 teaspoon salt
· 3/4 cup butter melted
· tablespoon of molasses
· 12oz buttermilk - about 1½ cup
· 1 egg
· ...and a few drops of vanilla occasionally
· My sainted Mother and several friends also swear by currants or sultana raisins in the mix.
(The written recipe order is different than in video)
1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a large baking sheet or put down buttered wax paper;
2. Melt ¾ cup of butter in a small pan over a low flame;
3. Add tablespoon of Molasses to almost melted butter;
4. Beat buttermilk and egg together in a medium measuring jug and then beat in melted butter and molasses;
5. In a medium sized bowl [see step 8 ], mix together unbleached and whole wheat flours, sugar, baking soda, baking powder, salt, oatmeal or bran;
6. Remember that you're going to leave a bit less than ¼ cup of the mixed liquid ingredients to be brushed on before placing loaf in oven;
7. Stir in the liquid -- saving that ¼ cup - using a blunt knife or thin spatula to 'cut' the ingredients together, pulling up the dry ingredients from the bottom of the bowl;
Important: don't overwork the mixture
8. If you've used a medium sized bowl with a nicely rounded bottom, you may be able to turn the 'loaf' out onto buttered wax paper placed on a cookie sheet or tray and knead slightly if loaf isn't yet holding together
otherwise
Turn dough out onto a lightly floured surface, kneading slightly if loaf isn't yet holding together, forming dough into a round, not too high, and then place on prepared baking sheet;
9. Use a sharp knife to cut an 'X' into the top of the loaf;
10. Brush loaf with the remaining liquid ingredients mixture;
11. Use your knife to recut the 'X' into the top of the loaf;
12. Bake in preheated oven for 48 to 55 minutes (52 minutes is the time I use,
or until a skewer inserted into the center of the loaf comes out clean.
Irish Soda Bread Complete Success Using 100% Fresh Milled Soft White Wheat Berries

I began milling wheat just about 2 months ago and I started with my Vitamix Wet Container which worked pretty good. However I did finally purchase a Mill and the results are a bit better with a finer flour. With only adding a bit more liquid to this recipe I had a perfect Irish Soda Bread. Fresh milled wheat can be more thirsty than all purpose flour so you may want to go with the 1 1/3 cup of buttermilk first and see if it is hydrated enough, if not add a bit more to be able to knead and form a nice round loaf!
Irish Soda Bread
4 cups sifted Fresh Milled Soft White Wheat Berries with Bran added back in OR all-purpose flour - I use Azure Market Organics Soft White Wheat - link below
¼ cup granulated sugar - I use Azure Market Organics Cane Sugar, Organic - link below
1 teaspoon salt
1 teaspoon baking powder
¼ cup butter
1 2/3 cups raisins
1 1/3 cup buttermilk plus 1/4 cup for the Fresh Milled Wheat
1 egg unbeaten
1 teaspoon baking soda
1 egg yolk
Directions
Heat oven to 350 degrees. Grease 2-quart casserole dish.
In large bowl sift flour, sugar, salt, and baking powder. Cut in butter. (I use a box grated to grate in the cold butter.) Rub butter into flour with fingertips until a coarse meal forms. Stir in raisins. In a separate bowl combine buttermilk, egg, and baking soda. Stir into flour mixture until just moistened. Turn mixture onto lightly floured surface. Knead lightly and shape into a ball. Place in greased casserole dish. Brush with beaten egg yolk. Bake 1 hour or until done and a toothpick inserted comes out clean. Cool in pan 10 minutes. Remove from pan to wire rack to cool completely before slicing.

IRISH BROWN BREAD
Preheat oven to 400 degrees F.
2 cups whole-wheat flour
1 1/2 cup all-purpose flour, plus extra for kneading and dusting
1/2 cup wheat germ
2 teaspoons baking soda
1/4 teaspoon kosher salt
2 cups buttermilk
1 egg, lightly beaten
1. In a large bowl add all dry ingredients. Whisk together until well blended. Mixture together buttermilk and egg. Slowly add buttermilk mixture to dry ingredients. Stir just until moistened.
2. Turn the dough onto a generously floured work surface. Gently knead dough 8-10 times...dough will be sticky. Shape dough into a 7-inch ball and transfer to baking sheet.
3. Lightly dust dough with flour. Cut a 4-inch X into the top of the dough, cutting about 1/2-inch deep.
4. Bake until the bread splits open at the X and makes a hollow sound when the underside is tapped, about 30-35 minutes. Transfer to a wire rack and let cool for 2 hours (ideally) before slicing.
