How To make White Bean Soup
1 lb Navy beans; dry
3 qt Water
1 ea Ham bone or hock; smoked
2 T Parsley; chopped
1 c Onions; finely chopped
1 ea Garlic; clove, minced
2 c Celery &tops; finely chopped
1 1/2 t Salt
1/2 t Pepper
Cover beans with water in large pot or soup kettle and soak overnight. Rinse beans well and return to pot with ham bone and 3 quarts of water. Simmer, uncovered, for 2 hours. Add parsley, onions, garlic, celery and tops, salt and pepper. Simmer, uncovered, for 1 hour or until vegetables are tender. Remove ham bone, dice the meat, and add meat to soup. Serve hot.

HOW TO MAKE WHITE BEAN SPINACH SOUP | HOMEMADE ITALIAN WHITE BEAN SOUP RECIPE
INGREDIENTS:
1 diced yellow onion
1 large diced carrot
3 cloves minced garlic
6 cups chicken broth
1 - 14oz can diced tomatoes with juice
1 - 40oz can white beans - rinsed and drained
4 cups baby spinach
1/4 tsp. salt plus to taste
1/4 tsp. black pepper
1 tsp. Better Than Bouillon chicken
1 Tbsp. Italian seasonings
1 Bay leaf
1/2 cup plus of grated Parmesan cheese
2 Tbsp. olive oil
In a soup pan on medium heat add oil, onion, carrot and a pinch of salt.
Cook and stir 2-3 minutes.
Add minced garlic and cook/stir for another minute.
Add in broth. Turn heat up to bring to simmer.
Add diced tomates and seasonings. Stir.
Cover and simmer for 10 minutes.
Add beans and spinach. Taste for any seasonings.
Bring back to a simmer, cover and cook for 15-20 minutes.
Turn off heat.
Add grated Parmesan cheese and stir.
Serve and enjoy.
