Spanish Style White Beans
Growing up, beans were a staple. We ate stewed beans all the time. The older I became, the more I learned to appreciate beans in its many forms. It was no longer just to be served with White Rice. This recipe reminds me of having a stew on a cold night. I hope you enjoy this recipe, and it becomes a staple in your home.
Spanish Style White Beans
Ingredients:
Use 2 tablespoons of Extra Virgin Olive Oil if not using pancetta.)
½ cup pancetta, cut into small cubes (can be omitted if you prefer a vegetarian option)
1 can Cannellini Beans (15.5oz.)
2 small Shallots, minced
3 to 4 garlic cloves, minced
1 tsp Sweet Smoked Spanish Paprika
1 envelope ground saffron (or a pinch of saffron threads)
Up to 2 cups vegetable stock
Preparation:
1. In a cold pan, add pancetta cubes and turn heat on to medium heat, and slowly render the fat from the pancetta and cook until crispy. (Word of caution. Pancetta can burn quickly, so do not leave it unattended. For Vegetarian option, use Extra Virgin Olive Oil instead of pancetta.)
2. Remove crispy pancetta. In remaining fat, add shallots and garlic and cook for 2 minutes, stirring constantly.
3. Next, add paprika and stir for 30 seconds. Then, add saffron and stir again.
4. Add beans (if using a can, please rinse them thoroughly). Mix to combine.
5. Add salt and pepper. Adjust to your liking.
6. Add 1 cup of vegetable stock and simmer for 20 minutes. (If you are looking for additional broth, add remaining cup of stock).
7. Adjust seasoning and enjoy by itself or with your favorite side dish.

Shopping List:
1 lb hot or mild Italian sausage
1 onion diced
3 cloves minced garlic
6 cups chicken stock
1 cup heavy cream
5 slices bacon
2-4 russet potatoes
3 handfuls chopped kale
2 tbs better than bouillon roasted garlic
1/4 cup parmesan cheese
salt, pepper, garlic, onion powder, Italian seasoning, red pepper flakes
Directions:
In a large pot over medium heat, cook bacon. Remove bacon when finished and reserve for later.
Next, cook sausage, breaking up with the back of a wooden spoon, until browned and no longer pink, 5 to 7 minutes. Transfer to a plate to drain.
Add onion and roasted garlic base to the drippings in the pot and cook until soft, then add garlic and cook until fragrant, 1 minute more.
Add chicken broth and potatoes and cook until potatoes are tender, about 20 minutes. (Fork tender)
Stir in kale and heavy cream and bring to a boil. Then, reduce to a simmer and let cook until leaves are tender and bright green. Season with salt, pepper, garlic, onion powder, Italian seasoning, and red pepper flakes to taste. Garnish with shredded parmesan.
