Nothing says summer like a cool sweet treat! This time lets revisit three cool retro summer desserts that are appropriate anytime, but most loved as cool summer refreshment! A couple of these were actually called salad back in the day and even if that doesn't sit well with you, it's all good because these are delicious no matter if you serve them as a dessert, a festive side or as a take along to your favorite family get together! Classic Jell-O cake is easy and refreshing and a favorite in my family growing up and as my kids grew up. Ambrosia salad is a festive sweet and satisfying creamy dessert style salad that will help you get your retro on and last but not least the Watergate salad will not have you impeaching the cook, but actually praising them! These all employ simple, easy to find ingredients that may make you feel like you are living in the past, but trust me, these are a fantastic way to revisit that sweet, sweet nostialgia of summers gone by!

Cherry Gelatin Cream Cake with Chocolate Drizzle Recipe | Big Y Dig In

Ingredients:
1 (6-ounce) package Food Club cherry-flavored gelatin
11/4 cups boiling water
Food Club non-stick cooking spray
3 cups finely crushed Crav’n Flavor vanilla wafer cookies
3 tablespoons Food Club sugar
1 cup Food Club salted butter, melted
11/2 envelopes Food Club unflavored gelatin
6 tablespoons cold water
11/2 cups cherry juice
2 1/2 containers Food Club frozen lite whipped topping, thawed, divided
1/4 cup milk chocolate chips, melted
Directions:

Step 1: Wash hands with soap and water.
Step 2: In a large bowl, combine cherry gelatin and boiling water. Stir until gelatin is dissolved, about 3 minutes. Pour into an 8-inch square pan that has been coated with cooking spray. Refrigerate for 3 hours or until firm.
Step 3: Dip bottom of pan in warm water for 15 minutes and cut into squares. Set aside.
Step 4: In a medium bowl, combine vanilla wafers, sugar and butter. Press into a greased 13x9-inch pan. Chill for 1 hour.
Step 5: In a small bowl, combine unflavored gelatin and cold water. Stir and let sit for 5 minutes.
Step 6: In a small saucepan, bring cherry juice to a boil. Stir in unflavored gelatin mixture until dissolved. Transfer to a large bowl and let cool completely.
Step 7: Once cool, whisk in 1 1/2 containers whipped topping. Gently fold in gelatin cubes and spoon over crust. Cover and chill for 1 hour. Top with remaining whipped topping, spreading it out in an even layer. Cover and chill for at least 1 hour.
Step 8: When ready to serve, drizzle top with melted chocolate.
