Cheeseburger Soup Lightened Up????????Cozy WW Soup Recipe / Weight Watchers Soup / With Calories & Macros This warm and cozy soup is a perfect comfort food for the cold winter weather! Ingredients:
16 oz Shady Brook Farms 93% lean ground turkey
3/4 cup carrots, chopped
3⁄4 cup celery, chopped
3⁄4 cup onion
medium bell pepper, chopped
1 tsp Dried parsley
1 tsp Dried basil
1⁄4 tsp Black pepper
2 tsp Minced garlic
5 tbsp light butter spread, divided (I used Brummel & Brown Spread Made with Yogurt)
3 cups Fat free chicken broth
4 cups Uncooked potatoes, diced
1⁄4 cup All-purpose flour(start with 3 Tbsp and add additional Tbsp if needed)
12 oz Velveeta 2 % Milk Pasteurized Cheese Product
1 1⁄2 cups Plain unsweetened almond milk
1⁄4 cup Plain fat free Greek yogurt (or fat free sour cream)
In a large pot, brown turkey over medium-high heat. Once done, set aside.
In the same pot over medium heat, saute onion, carrots, celery, pepper, basil and parsley in 1 tablespoon lightened butter spread until vegetables are soft, about 10 minutes. Add in garlic, and cook until just fragrant, about 1 minute.
Add broth, potatoes and turkey; bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender.
About halfway through the simmer time for the soup, get a small skillet, melt remaining butter spread. Add flour; cook and stir for 3-5 minutes. Add to soup. Increase heat and bring to a boil. Cook and stir for 2 minutes.
Reduce heat to low. Add cheese and milk; cook and stir until cheese melts. Turn off heat and stir in Greek yogurt or Fat free sour cream.

Ingredients:
2 medium Uncooked potatoes, about 10 oz
2 Tbsp Brummel & Brown Spread Made with Yogurt
1 medium Uncooked sweet onion
2 Tbsp All-purpose flour
4 cups Fat free chicken broth
2 cups Water
5 Tbsp Cornstarch
1 1⁄2 cup Instant mashed potatoes
2⁄3 cup Kroger Reduced fat sharp cheddar finely shredded cheese, divided
1 1⁄2 cup Fat Free Half & Half
Black pepper to taste
1⁄2 tsp Dried basil
1⁄8 tsp Dried thyme
4 slices bacon, cooked
1⁄4 cup green onions, chopped
Melt the butter spread in a large pan, on medium heat. Add the diced onions and saute until translucent. Add garlic and cook another minute. Add the flour to the onions, stirring to incorporate them, cook for about a minute. Dissolve the cornstarch in the cold water. Add the broth, dissolved cornstarch water, instant mashed potato flakes, and seasonings and stir. On medium-high heat, bring the mixture to a boil, stirring often. Reduce heat and simmer for 5 minutes. Cut the baked potatoes in half lengthwise, and cut in their skins, to make small bite-sized pieces. Scoop out the potatoes and add them, 1/3 cup cheese and half & half to the soup, stirring to combine all the ingredients. Bring it back to a boil, then reduce heat and simmer the soup for another 12-15 minutes, stirring every couple of minutes. Top each serving with about 1 1/2 tsp remaining cheese, bacon and green onions.

Green, orange, red pepper
Broccoli
Cauliflower
Mushrooms
Green beans
Carrots
Spinach
Celery
Zucchini
Yellow squash
Cabbage
32 ounces fat free chicken broth
6 ounce tomato paste
15 ounce no salt diced tomatoes
4 cups water
Combine all ingredients in crock pot and cook on low for 4-5 hours
