Mediterranean Chicken Zucchini Boats ~
2 med-lrg zucchini ends removed, 1/2tsp garlic powder, 1/2tsp onion powder, 2C chopped spinach, 3oz (3/4C) shredded chicken, 1/8tsp salt & pepper, 1/4C crumbled feta, 1T chopped sun dried tomatoes (bagged or rinsed), 1T sliced black olives.
Pierce zucchini with fork, microwave 2 min, flip for 2 more min. Cool. Cut in half and scoop out insides. Put some of the inner chopped zucchini in frying pan. Pat zucchini dry. Place on baking sheet. Sprinkle 1/4tsp onion & garlic powder on zucchini halves. To pan, with chopped zucchini, add spinach, chicken, salt pepper and 1/4tsp each onion and garlic powder. Cook until spinach wilts. Remove from heat. Stir in 2T feta. Place evenly in zucchini boats. Sprinkle with remaining 2T cheese. Broil about 3 minutes. Top with tomatoes & olives. ENJOY!

Chicken and Apple Stuffing Casserole ~
Garlic Chicken White Pizza ~
3T light/low fat ricotta, 1tsp chopped garlic, 1/8tsp onion powder, 1 whole wheat pita, 2oz (1/2C) chicken, 1/4C skim mozzarella, 1tsp grated parm, 4 small tomato slices, 2T chopped fresh basil.
Mix ricotta, garlic & onion powder. Spread on pita. Top with Chicken, Mozzerella, Parm & Tomatoes. Bake 375 10-12 min. Top with fresh basil. ENJOY!

Cranberry Chicken Slaw ~
4C Broccoli Slaw, 6oz (1 1/2C) rotisserie chicken, 1/2C water chestnuts chopped, 1/3C chopped scallions, 1/4C sweetened dried cranberries chopped, 1/3C light sesame ginger dressing, 2tsp sesame seeds.
Mix all together,stir in dressing and top with seeds. Cover and refrigerate 15 min. ENJOY!

Today I'm sharing three easy recipes that are perfect to prep ahead. I'm making a unique and tasty chili, tasty apple zucchini muffins, and the perfect prep ahead sheet pan dinner. Check it out, and don't forget to subscribe!

Chili Recipe:
Olive oil
1 onion, diced
1 red pepper, diced
1 lb ground beef, I used 90/10
3 - 3 1/2 Tbs chili powder (to taste)
2.5 Tbs cumin
2 Tbs sugar
1 Tbs oregano
3 garlic cloves, or a Tbs ground garlic
1/2 tsp salt
4 Tbs tomato paste
1 28 oz can diced tomatoes
1 15 oz can tomato sauce
1 cup beef broth
1 1/2 cans no salt added black beans
*If you are using low sodium beef broth, or salted beans you will probably want to adjust the added salt.
*If you prefer a spicier chili you can add cayenne.

Veggie and Chicken Sausage Sheet Pan Meal Recipe:
You can add any veggies you'd like, and any sort of sauce. Here is what I used.
1 package apple chicken sausage
2 onions
1 1/2 zucchinis
1 pack of cherry tomatoes
1 bag frozen butternut squash
Olive oil, butter
Season with: Salt, pepper, garlic powder, oregano, thyme

✨KODIAK MUFFINS
1 box Kodiak muffin mix (any flavor)
2 eggs
1 cup water
1/3 cup fage Greek yogurt (total 0% for 0 smart points!)
•Bake according to package instructions.
•Yields 12 muffins at 4sp each!
✨SHAKE N BAKE CHICKEN NUGGETS✨
2 chicken breasts
1 box shake n bake
•follow directions on the box and air fry for 10-12 minutes, shake them half way through!
•made 3 servings of 10 nuggets
•2sp per serving
✨ ZERO POINT GREEN CHICKEN CHILI
-2 large chicken breasts
-1 jar of salsa Verde
-3 cans of great northern beans
-2 cans green Chile’s
-1 cup chicken broth
-garlic powder, onion powder, seasoned salt and cumin to taste (about 1/2 tablespoon each, only a pinch of the seasoned salt)
•Add chicken to crock pot, salt and pepper to taste then pour in half the jar of salsa verde
•Cook on low (or high) until chicken is tender and easy to shred (1-3 hours)
•Once chicken is pulled and shredded add in all canned ingredients, seasonings, and the other half of the salsa
•cook in crockpot on low for 2-4 hours or let simmer on your stove top for at least 45 minutes
I got about 6 large portions and it’s ZERO POINTS!
