InstantPot Chili With Stew Meat - Recipe - Large Family Living
I'm back with another InstantPot recipe. Today you will see a chili that was simplified by adding salsa for the flavor while dressing it up with stew meat instead of ground beef. This video is a little different since I made this chili when I had no voice, so I actually took a series of pictures and then voiced over them to say what I would have while making it.
Ingredients:
Beef stew meat cut into soup size pieces
Olive oil
1 onion
2 cups red/kidney beans
2 cups brown rice
1 large jar salsa
1 box beef broth or 4tbs Better Than Bouillon
2 cans diced tomatoes
Water (only if needed, top off to bring level up to capacity)
*Weight Watchers- when I entered this and then divided it by the serving size we use for a single bowl (about 2 cups worth, just under) it came out to be 2 smart points under the new Freestyle program.

Hot Texas Chili Soup
1 can rinsed and drained cooked red kidney beans
1/2 lb cooked ground turkey
2 cans stewed tomatoes
2 small cans tomato sauce
1 1/2 cups chopped onions
1 can chopped green chilies
1 tbsp plus 2 tsp chili powder
1 1/2 tsp ground cumin
1 tsp paprika
1 tsp dried oregano
1/4 tsp hot pepper sauce
In crockpot, combine all ingredients plus 2 cups of WATER. Cover and cook on Low 4 hours or High 2 hours, until onions are tender.
Makes about 6 servings.

1 can of diced tomatoes
1 can of sweet corn
1 can of Rotel Mild Diced Tomatoes & green chilies
1 can of Pinto Beans
1 can of black beans
1 can of spicy chili kidney beans
1 cup of Mexican Blend of Cheeses Pack
1lb Ground Beef
Chopped Green Onion for garnishing
Cilantro for garnishing
1 cup of Season Blend Mix (onions, red and green peppers, celery and parsley flakes)
Sour Cream with Chives
Bacon Pieces
2 cups of Beef Broth
1-2 packs of Taco Season Packs
1 pack of Dry Ranch Seasoning
Chili Cheese Fritos

⭐️ HOMEMADE ENCHILADA SAUCE 2 WAYS
INGREDIENTS
1 lb lean ground meat of choice
2 tsp light chili powder
1/2 tsp ground cumin
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
14 to 16 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack cheese
ENCHILADA RED SAUCE INGREDIENTS
4 Tbsp cup oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
14.5 oz can of chicken broth
*extra water if needed
salt and pepper to taste
**You can substitute the broth with 16 oz of water
and 1 Tbsp chicken bouillon powder

????????SPINACH PEPPERONI CALZONE
2 ingredient dough (1/2 cup self rising flour, 1/2 cup Fage total 0 plain yogurt)
2oz Trader Joe’s lite mozzarella cheese
10ish turkey Pepperoni
Small handful Spinach
1/4 cup (or less) Cooked chicken- diced
Make dough, fill with ingredients, fold over and top with olive oil spray or butter spray, add Italian seasoning for an extra delicious crust!
Bake at 375 for 15-20 minutes (keep an eye on it) and take out when crust is golden brown!
????????WHITE CHICKEN PIZZA
Ultra thin premade crust
Light Alfredo
Sundried tomatoes
Low fat pepperoni
Canadian bacon
Low Fat Mozzarella Cheese
Italian Seasoning
Start with 1/3 cup Alfredo sauce on the crust, add topping and then top with mozzarella cheese. Sprinkle on some Italian seasoning and bake according to the crust package instructions (mine was 400 for 8-10 minutes)
????????FAJITA BOWLS
Thin Sliced Chicken breast (cut into strips)
Bell pepper
Yellow onion
Fajita seasoning
Cumin
Chili powder
Use olive oil spray to coat chicken and veggies, add fajita seasoning, chili powder, Cumin, and bake for 12-15 minutes at 400 or until chicken is cooked through and veggies are tender. Serve on tortillas, or in a bowl with rice and beans! (Would be delicious with the Spanish Cauliflower rice!)

Top naan with toppings and bake at 400 for 10 minutes. Broil it quickly to get the cheese bubbly- but keep an eye on it!)

Ole Xtreme wellness wrap
Burger toppings
Ore idea golden crinkles
Cook chicken burger according to package instructions, cut into strips and add to the wrap with desire toppings. Cook fries in the air fryer for 10-13 minutes at 360 degrees or bake in the oven.
????????SPANISH CAULIFLOWER RICE:
1 bag frozen cauli-rice with carrots and peas
1 can rotel
Fajita seasoning
Chili powder
Cumin
Throw everything in a pan on medium-high heat and cook for 10 minutes, covered. Stir occasionally so it doesn’t burn! Then take the lid off and let is finish on medium heat for about 5 minutes until it softens and all liquid is evaporated! DELICIOUS YALL!
I served with the Chimichurri Chicken breast from sams club and pinto beans seasoned with fajita seasoning
