Easy Broccoli Salad | WW friendly (Weight Watchers)????????????Perfect Make-Ahead Summer Salad!
This delicious, quick and easy broccoli salad is best made ahead and makes a great side for any summer get together! The crisp broccoli, sweet dried cranberries, salty sunflower seeds, and bacon bits, tossed with the tangy, sweet, creamy, homemade dressing, makes for a great combination!

8 cups Uncooked broccoli, chopped (the smaller the better!!)
1⁄2 cup Uncooked red onion, chopped
1⁄2 cup Uncooked bell pepper
8 Tbsp (1/2 cup) Kroger Hickory smoke flavor real bacon bits
1⁄2 cup Kroger 50% Less sugar dried cranberries
1⁄4 cup Sunflower seeds
1⁄3 cup Dukes Light mayonnaise
2⁄3 cup Plain fat free Greek yogurt
3 Tbsp Apple cider vinegar
2 Tbsp Lakanto Monkfruit sweetener with erythritol, classic
salt and pepper to taste
Whisk together cider vinegar, sweetener, mayonnaise, Greek yogurt, salt and pepper in a medium bowl. Set aside.
In a large bowl, combine broccoli, onion, peppers, cranberries, sunflower seeds, and bacon bits. Pour the prepared dressing over and mix well.
Refrigerate for at least one hour before serving. This tastes best when it is made a day ahead of time!

WEEKLY MEAL PREP FOR WEIGHT LOSS ON WEIGHT WATCHERS MADE EASY!

SOUP 5 POINTS FOR 1 1/2 CUP MAKES ABOUT 8 SERVINGS
- 1 whole rotisserie chicken
- 8oz medium egg noodles
- 2 carrot stalks
- 2 celery stalks
- 1 yellow onion
- 3 garlic cloves
- juice of 1 lemon
- 4 32oz containers chicken broth
- 4 cups water
- fresh herbs (rosemary, thyme, sage, oregano, bay leaf
- seasonings : adobo all purpose seasoning, garlic + onion powder, salt + pepper
chop vegetables and mince garlic, pull chicken apart and use the skin of chicken to create oil in the pan and also use juice of chicken from the bottom of bag. Once oil has created take the skin out. Add in the veggies and sautee until softened. Add only some of your chicken broth enough to cover the veggies, add seasonings, herbs, and lemon. Boil down veggies for about 8-10 minutes on low to medium heat.
Add in the remainder of the broth, chicken you diced up, and half the bag of noodles. Bring heat to medium for a slight boil and cook pasta for 10 - 12 minutes. Turn heat off and let sit.
OATS ARE 7 POINTS MAKES 4 CONTAINERS
- 1/2 cup in each of quick oats
- 1/2 cup reduce fat milk in each
- 1/2 cup water in each
- 1 tbsp raisin in each
- about 1 scoop of protein powder in each
- pinch of pumpkin spice on top
shake well and store in refrigerator overnight, the next day you can eat them cold or warm them up in microwave.
TUNA 3 POINTS MAKES ABOUT 8 SERVINGS 1 CUP PER SERVING
- 4 cans of tuna in water
- 1 whole apple
- 1/3 cup raisins
- 1/4 cup banana peppers
- 1/3 cup white onion
- 2 cup light mayo
- 1/2 tbsp Dijon mustard
- salt + pepper , garlic powder
mix well and store in refrigerator
serve on salad or in lettuce cups

4 CUPS OF ANY VEGETABLES ( I USED RED, YELLOW, ORANGE PEPPERS, CUCUMBER , ZUCHINI, SHREDDED CARROTS, BROCCOLI)
1/4 CUPOR MORE FRESH PARSLEY
3 GREEN ONIONS ( OR ANY ONION)
4 OZ PASTA ( COMES OUT TO 2 CUPS COOKED) I USED HALF THE CALORIES ALL THE TASTE PASTA ( FROM THE #LOWCARBGROCERYSTORE) OR ANY LOW FAT PASTA..6SP
SPRINKLE OF FRANKS HOT SAUCE ( OPTIONAL)
1 TSP OR MORE GARLIC POWDER
