How To make Vegetable Samosa
8 oz Potatoes, cut in even-size
-pieces 3/4 c Frozen green peas
2 tb Corn oil
1 Onion, finely chopped
1/2 ts Cumin seeds
1 Piece ginger root, peeled,
-grated (1/2") 1/2 ts Turmeric
1/2 ts Garam Masala
1/2 ts Salt
2 ts Lemon juice
1 c All-purpose flour
2 tb Butter
2 tb Warm milk
Vegetable oil for deep -frying Lime twists (opt) Fresh celery leaves (opt) Mango Chutney In a saucepan, boil potatoes in salted water 15-20 minutes or until tender. Drain well, return to saucepan and shake over low heat a few moments or until dry. Mash well. Cook peas in boiling salted water 4 minutes. Drain well. Heat oil in a skillet. Add onion, cumin seeds, ginger, turmeric, Garam Masala and salt. Cook gently 5 minutes. Add mashed potatoes and peas, then stir in lemon juice. Mix well, remove from heat and cool. Sift flour into a bowl. Cut in butter finely until mixture resembles bread crumbs. Add milk and mix to form a stiff dough. Divide in 6 equal pieces. Form each piece in a ball and roll each ball on a lightly floured surface to a 6" circle. Cut each circle in half. Divide filling equally among semicircles of pastry. Dampen edges of pastry, then fold over and seal to form triangles which enclose filling completely. Half fill a deep-fat fryer or saucepan with oil. Heat oil to 375'F. (190'C.) or until a 1/2" cube of day-old bread browns in 40 seconds. Fry samosa in hot oil, a few at a time, 3-4 minutes or until golden brown. Drain on paper towels. Garnish with lime twists and celery leaves, if desired, and serve hot with Mango Chutney. Makes 12 samosa.

Ingredients:
1 tbsp Oil
1 tbsp Ginger-garlic, crushed
1 cup Cabbage, shredded
1/4 cup Bean sprouts
1/4 cup Carrot, juliennes
1 tsp Soy Sauce
Black Pepper
1 tsp Red Chilli sauce
Samosa Patti
Water
Refined flour slurry
Oil for frying
Method of preparation:
Heat a wok, add oil, once the oil heats, lower the flame and add ginger-garlic.
Once you add ginger-garlic, turn the flame on high and allow it to cook for 30 secs so that the raw smell goes away.
Add cabbage, bean sprouts, carrot, salt and allow it to cook on high flame, till it starts sweating.
Add soy sauce, give it a quick toss and allow it to sweat.
Add black pepper, red chilli sauce and give it a final mix.
Switch off the flame and allow it to cool down completely.
Transfer the mixture to a bowl.
Apply some water on the patti's, add a spoonful of the mixture, keep folding it into a triangle.
Apply the refined flour slurry on the edge of the pati, so that it sticks.
Heat oil in a vessel and fry the samosas crisp in it.
Our Chinese Samosa is ready to plate.

2 whole green chillies
1/2 tsp mustard seeds (feel free to use whole cumin instead)
1 onion diced
3 potatoes
2 carrots
1 1/2 tsp salt
1/2 tsp turmeric
1/2 tsp ground cumin
1/2 cup peas
Juice of one lime
1 pkt samosa wraps
3 tbsp flour and enough water to make a paste
Feel free to use mixed veg of your choice

VEGETABLE SAMOSA INGREDIENTS
5oz Mixed Vegetables – Peas, Corn, Carrots, Beans
3oz Frozen Corn
8oz Frozen Peas
1 lb Boiled Potatoes (Red Skinned)
4 oz Small Onion Finely Chopped
5 Tbspn Finely Chopped Coriander
2 Tbspn Oil
2 Tbspn Lemon Juice
¼ tspn Whole Cumin Seeds
1 ½ tspn Salt
½tspn Red Chili Powder
1 tspn Garam Masala
¼ tspn Turmeric
2 tspn Ginger-Garlic-Chili Paste
½ tspn Sugar (or to taste)
For the Paste:
¼ Cup Plain Flour
4 Tbspn Water
And 60 - 80 Samosa Pastry (as we will use double pastry)
