How To make Curried Spinach Samosa
CRUST:
1/2 c Water
1/3 c Organic safflower oil
1 pn Salt
3 c Whole wheat flour
FILLING:
1 tb Sesame oil
1 bn Green onion; finely chopped
3 md Carrots; diced
1 lb Fresh spinach
-- washed, dried & chopped 1 pn Salt
1/4 ts Curry powder
1 tb Tamari
1/4 c Water
1 tb Kudzu (Japanese arrowroot)
Combine water, oil, and salt in a small saucepan and bring to a boil. Remove from heat and beat the mixture with a whisk until it has a milky appearance. Add to flour in a large bowl. Gently knead the dough just until mixed well. Form into a ball and let sit for 30 minutes (or cover and place in a refrigerator until needed and then bring to room temperature.) For the filling: heat oil in a skillet. Saute onions and carrots for 1 minute. Sprinkle with salt and curry powder and add chopped spinach. Cover and steam over medium heat until spinach wilts and the carrots are tender, about 4 minutes. Season with tamari. Dissolve kudzu in 1/4 cup water, add to spinach mixture, and cook for about 1 minute, stirring constantly, to thicken and glaze. Preheat oven to 375 degrees. Divide the dough in half and roll out until about 1/8" thick. Using a saucer or a small plate as a guide cut the dough into 4" circles. Place 2 Tbs. of filling in the middle of each circle. Fold over and pinch edge shut. Using a fork, poke a few holes in each samosa. Place on an oiled cookie sheet and bake for 30 minutes. Delicious hot or cold. Try this decadent samosa loaded with cheese, spinach and chicken mince and enjoy your evening snack time.
CHEESY SPINACH CHICKEN SAMOSA
Ingredients
¼ cup cream cheese
1 cup shredded spinach leaves
300 grams chicken mince (keema)
6-8 samosa patti
6-8 tbsps grated processed cheese
1½ tbsps oil + for deep frying
1½ tbsps finely chopped garlic
2-3 green chillies, chopped
1 medium onion, finely chopped
Crushed black peppercorns to taste
Salt to taste
A pinch of red chilli powder
¼ tsp turmeric powder
¼ tsp cumin powder
½ tsp coriander powder
Refined flour slurry as required
Method
1. Heat oil in a non-stick pan. Add garlic, green chillies, onion and crushed black peppercorns and sauté for 1-2 minutes.
2. Add chicken mince, mix and sauté on high heat for 2-3 minutes. Add red chilli powder, turmeric powder, cumin powder and coriander powder and mix well. Cook till the moisture evaporates.
3. Take the pan off the heat, transfer the chicken mixture into a bowl. Add spinach leaves and cream cheese and mix well. Set aside to cool to room temperature.
4. To make the samosa, take a samosa patti and place a portion of the mixture on one end and sprinkle 1 tbsp of the processed cheese. Start folding into triangle and seal the edge with slurry.
5. Heat sufficient oil in a kadai. Gently slide the samosas into the hot oil and deep fry till golden brown and crisp. Drain on an absorbent paper.
6. Serve hot

VEGETARIAN CURRY POTATO & PEAS TURNOVERS
Ingredients:
3 potatoes
1/2 tsp ground cumin
1 tsp curry powder
salt/pepper mix to taste
450 gr frozen green peas
1 onion
3 garlic cloves
1 hot pepper (optional)
1-2 pack puff pastry (thawed)
Preparation:
mash the onion
add some salt
add the garlic
add the hot pepper (optional)
transfer the paste to a bowl
peel and cut the potato in small cubes
add oil to the hot pan
add the paste
add the salt/pepper mix
add curry powder
add the potato
add some hot water to soften the potato
stir and cover
let simmer on low heat
stir occasionally
add more hot water - if needed
add the ground cumin
add the frozen green peas
stir and cover
add hot water and keep stirring occasionally
check the softness of the peas
the sauce has dried up, it's done
transfer and let cool off
dust the cutting board with some flour
put the puff pastry sheet on the flour
peel off the foil
place the filling in the middle
fold over in triangle shape
dip the fork in flour and seal the edges
place on a baking sheet
start preheating the oven at 375 deg
bake for 15-20 min or till golden brown
