This casserole recipe is easy, relatively cheap and fun to make. It’s also a fantastic comforting and warming dish that can be eaten all year round. Personally, I never used to like casseroles as a kid until I started cooking professionally and experimenting with different techniques and flavours. You won’t be disappointed with this casserole recipe.

Ingredients -
2 Tbsp (40ml) - Olive Oil
1.4kg (3lbs) - Beef Bolar Roast, Large Diced
70g (2.4oz) - Plain (All Purpose) Flour
3 - Brown (Yellow) Onions, Quartered, Roots Intact
3 - Carrots, Washed & Thickly Sliced
3 - Celery Ribs, Washed & Thickly Sliced
6 - Garlic Cloves, Crushed
5g (0.3oz) - Thyme
1 Cup (250ml) - Red Wine or Beef Stock (See Note Below)
2 1/2 Tbsp (35g) - Concentrated Tomato Paste
2 1/2 Tbsp (50ml) - Balsamic Vinegar
1 Litre (4 Cups) - Beef Stock (See Note Below)
3 - Dried Bay Leaves (Optional)
Seasoning To Taste
Recipe Notes -
Like all my recipes, if any contain alcohol there are always substitutes. For this recipe, the red wine can be substituted with beef stock. There is beef stock already in this recipe but don’t use less due to the fact that it’s being swapped, the initial addition is to deglaze the pan and create a base foundation.

How to make the best Beef And vegetable stew. Tasty Beef Sauce
INGREDIENTS:
* 3 lbs beef cleaned, and cut into bite sizes
* 1/2 large onion chopped finely
* 1 tbsp garlic paste
* 1 tbsp ginger paste
* 1 tbsp herb and spice blend
* 1 tsp salt
* 1/2 tbsp all purpose seasoning, or 1 small bouillon cube
* 2 tbs olive oil for sautéing beef
Stew ingredients:
* 4 tbsp sliced oil or olive oil
* 1/2 large onion thinly sliced
* 2 tbsp herb and spice blend
* 1/2 tsp curry powder
* 1/2 tsp all purpose seasoning
* pinch of salt
* 1/2 cup tomato paste, or 2 tbsp tomato paste with 1 tbsp beetroot purée
* 1 each red, yellow, and green bell peppers
* 1 cup chopped string or green beans
* 1/2 a small head of cabbage cut to bite sizes
* 1/2 cup beef broth or water (optional to thin stew up)

Beef stew
Ingredients:
4 Lbs Beef Chuck Roast (cut into cubes)
1 Onion (diced)
3 Ribs Celery (diced)
3 Carrots (diced) + 4 Carrots (sliced)
2 Cups Russet Potatoes (quartered)
4 Garlic Cloves (minced)
2 Tbsp Tomato Paste
1/3 Bottle Cabernet Wine
1 Tbsp Rosemary (chopped)
2 Sprigs of Thyme
2 Bay Leaves
4 Cups Beef Stock
3 Tbsp Corn Starch + 6 Tbsp Cold Water (slurry)
Olive Oil
Parsley (chopped)
Salt and Pepper
Instructions:
In a large bowl add the beef cubes and season with olive oil, salt, and pepper.
In a large pot or Dutch oven on medium heat. Add oil and sear the beef in batches. Remove the beef from the pot and set aside.
Next add diced onion and caramelize slightly. Add celery, carrots, and garlic. Sauté till fragrant then season with salt and pepper.
Once the vegetables are softened, add tomato paste and brown slightly. Deglaze with red wine and bring to a simmer. Add the seared beef back to the pot along with rosemary, thyme, and bay leaf. Cover with beef stock. Season with more salt and pepper. Cover with a lid and braise in the oven set to 325 degrees Fahrenheit for 1.5 hours.
After 1.5 hours, add sliced carrots and potatoes. Continue to braise for another 1.5 hours until the beef is tender and the potatoes are soft. Next combine corn starch and cold water together making a slurry. Add the slurry to the simmering stew a little at a time until thickened to your desired thickness. Adjust the seasoning to your taste. Serve in a bowl and garnish with chopped parsley.

My Ron and I love spending weekends at home relaxed, and this soup is one I love to prepare, I usually serve it with pieces of crusty bread, cornbread or saltine crackers. This delicious chunky vegetable beef soup is perfect for entertaining family or friends and it freezes perfectly for another day, I hope you give it a try. ❤️
INGREDIENTS _____________
1 1/2 lbs. Chuck Roast (bite size pieces)
1 lbs. Red potatoes (1/2 inch pieces)
1 1/2 C. Fresh green beans or frozen (tips removed & cut into 3)
1 3/4 C. Fresh corn (you can use frozen)
1 Medium Chopped onion
1 1/4 C. Chopped celery
1 1/4 C. Chopped carrots (i used 3 skinny long ones)
1 C. Frozen peas
4 Large garlic cloves (minced)
2 14.5 oz petite diced tomatoes
2 1/2 Tbsp Olive Olive Oil (divided)
2 tsp dried BASIL
1 1/2 tsp dried THYME
1 1/4 tsp OREGANO
1 tsp Crushed ROSEMARY
3 tsp sugar (not 2)
2 Bay leaves
1/2 Can Tomato paste (3oz)
Pepper as needed
Salt as needed
1 Tbsp BEEF BOUILLON (I used KNORR)
3 tsp Lemon juice (start with 1 or 2 if you like)
7 C. Beef broth
Chopped parsley (for garnish)
All Purpose Flour (as needed for meat)
