How To make Spam Vegetable Casserole
2 cn Cream of mushroom soup
-(10 3/4 oz) 1/2 c Milk
1/2 c Pasteurized process cheese
-spread 1 pk Mixed frozen vegetables
-(16 oz) 1 cn SPAM Luncheon Meat, cubed
-(12 oz) 1 1/4 c Uncooked instant rice
1 c Shredded Cheddar cheese
1 cn French-fried onions (2.8 oz)
2 c Crushed butter crackers
1/3 c Butter or margarine, melted
Heat oven to 350'F. In bowl, combine soup, milk, and cheese spread. In large bowl, combine vegetables, SPAM, rice, cheese, and onions; stir in soup mixture. Pour into 13x9" baking pan. Combine crackers and melted butter; sprinkle over casserole. Bake 50-55 minutes or until hot.

Ingredients and recipe:
Pour 1 can of corn in a colander
Crack 1 egg in the corn
Salt and black pepper
Add 1/3cup corn starch
Mix well
Pour olive oil in the pan
Add the corn mixture to the pan
Sprinkle 30g mozzarella cheese
Fry for 5 minutes on medium-low heat
Sprinkle green onion on top
Done!

How to make Country Kitchen Casserole (Campbell Soup, Spam)
Here's another recipe from 'Most for the Money Main Dishes' - a Campbell Cookbook from 1971 full of easy, economical meal ideas. I've shared another recipe from this book already (Gold Coast Pork Chops) if you're interested.
It's an American cookbook, but I'm in Australia now, so I'll give the original recipe first, followed by the modified version I use as our products are not always the same, e.g. different can sizes, etc.
ORIGINAL RECIPE:
1 can (10-3/4 oz) condensed cream of mushroom soup
1/4 cup water
2 teaspoons prepared yellow mustard
1 teaspoon Worcestershire
1 cup shredded cheddar cheese
2 cans (about 16oz each) small whole white potatoes, drained and sliced
1 package (10 oz) frozen peas, cooked and drained
1 can (12 oz) luncheon meat, cut in 6 slices
In bowl, combine soup, water, mustard, Worcestershire and cheese; add potatoes and peas. Spoon into 1-1/2 qt shallow baking dish (10x6x2); top with meat. Bake at 400F for 25 minutes or until hot. Makes 6 servings.
MY AUSSIE VERSION:
The method is the same, but the ingredients differ a bit -
1 can (420g) cream of mushroom soup
1/3 cup water
2 tsp yellow mustard
1 tsp Worcestershire
1-1/2c shredded cheese
1 large (750g) and 1 small (410g) can small whole potatoes
300g frozen peas or mixed veggies
1 can spam, cut into 6 slices
Assemble as above and bake at 200C / 190C (if fan forced) for about 25 minutes or until hot and bubbly. Visit and Like us on Facebook:

Great Depression Cooking - The Poorman's Meal - Higher Resolution
Clara's Poorman's Meal is one of my favorite dishes. It was the reason we began this channel. I could never remember just how Nana made it, and being a visual person, what better way to have the recipe than as a video.
This is a higher resolution version of Clara's Poorman's Meal video. It was shot in SD and now up-resed to HD. Not perfect, but a big improvement from the 2007 YouTube standard of 144p!
This was the very first meal we filmed for her show. We'll leave up the original and enjoy this one for improved clarity as well as a new ending message from Clara.
I recently rediscovered the original tape, dated April 10, 2007, just days away from its thirteenth anniversary. On June 2007 I posted it as the 4th video of our initial posts (saving the best for last, of course). At the time there were very few concept YouTube channels and it wasn't yet owned by Google.
As a filmmaker, I tried convincing TV studios that this was a great show idea. I was told that there wasn't really an appetite for a cooking show about the history of the Great Depression, hosted by an unknown 91 year old Grandmother.
I saw YouTube as a place I could make the show anyway and let people decide for themselves if they wanted to learn meals from the Depression and meet my amazing Grandmother. And you did decide. Thanks for watching and I'll try to continue to share Clara and her incredible cooking as best I can.
