You get 5 of your daily fruit and veg in one portion, it's a great dish to make that will serve 8 people generously. This recipe has a lasagne vibe but instead of pasta, I've used filo pastry. Serve it in the middle of the table with a big salad and a glass of wine, happy days!

Baked vegetables with white sauce
Baked vegetables with white sauce | बेक्ड वेजीटेबल वित व्हाइट सॉस | Chef Sanjyot Keer
Full recipe for Baked vegetables with white sauce
Prep time: 10 mins
Cooking time: 20 mins
Serves: 4
Ingredients:
• Butter 3 tbsp
• Refined flour (maida) 3 tbsp
• Milk 200 ml
• Salt to taste
• Pepper powder a pinch
• Nutmeg powder a pinch
• Processed cheese 200 gm
• Olive oil 1 tbsp
• Carrot ½ cup (diced & blanched)
• Mushroom ½ cup (diced)
• Green peas ½ cup (blanched)
• Sweet corn ½ cup (blanched)
• French beans ½ cup (diced & blanched)
• Capsicum ½ cup (diced)
• Broccoli florets ½ cup (blanched)
• Salt to taste
• Black pepper a pinch
• Oregano 1 tsp
• Red Chilli flakes 1 tsp
Method:
• Heat butter in a pan on medium heat, add flour, stir and cook well ensuring the colour doesn’t changes a lot.
• Add the milk slowly and gradually and keep whisking to avoid lumps.
• Add salt & pepper, nutmeg powder and grate processed cheese, mix well and cook further for 2-3 minutes, make sure the sauce is silky smooth without any lumps.
• Set a wok on medium high heat, add olive oil add the veggies, salt & pepper, oregano and chilli flakes. Sauté for 2-3 minutes, add the freshly prepared white sauce, mix well and cook for 2-3 minutes.
• Pour the veggies with white sauce in a baking dish and grate some processed cheese over it.
• Preheat the oven for 10 mins and bake it at 180°C for 10-12 minutes.
• Serve hot with freshly toasted garlic bread.
For garlic bread
Ingredients:
• Melted butter ½ cup
• Garlic 4 tbsp (chopped)
• Fresh coriander 1 tbsp (chopped)
• Garlic bread 1 loaf
Method:
• Mix the melted butter with finely chopped garlic and fresh coriander leaves.
• Slice the garlic bread loaf diagonally and apply the freshly made garlic butter on the bread slice surface.
• Heat a grill pan or a normal pan on medium heat, toast the garlic bread on both the sides until crisp and golden brown.
Cottage Cheese Casserole Recipe With Meat and Potatoes

We need:
1. Potatoes 1 kg
2. Onion – 2 pcs
3. Eggs - 8 pcs
4. Cottage cheese – 1/2 kg
5. Ground beef - 1/2 kg
6. Salt - 3 tsp
7. Black pepper - 1 tsp
8. Sugar – 1 Tbsp
9. Starch – 3 Tbsp
10. Vegetable oil – 4 Tbsp
11. Cheese strips for garnish.
To cook a layer with potatoes:
- Peel and boil potatoes – 1kg.
- Make mashed potatoes. Add salt -1 tsp, 2 eggs, vegetable oil – 2 Tbsp., black pepper -1/2 tsp.
To cook a layer with ground beef:
- Peel and chop 2 onions in a chopper until liquid. Add some water to make it easier to chop the onion.
- Mix chopped onion with 1/2 kg of ground beef. Add salt -1 tsp., 3 eggs, starch -1 Tbsp., black pepper -1/2 tsp.
To cook a layer with cottage cheese:
- Combine 1/2 kg of the cottage cheese with 3 eggs. Add salt -1 tsp., starch -2 Tbsp., sugar -1 Tbsp., vegetable oil – 2 Tbsp.
Grease a baking dish with vegetable oil and sprinkle with starch.
Place a layer of potatoes on a baking dish, then a layer of meat, and put a layer of cottage cheese on top.
If there is some liquid in the meat, that's okay. Just stir it before placing it in a baking dish. When baking, the starch and eggs will help turn the liquid into a tender and airy casserole.
Garnish with strips of cheese on top.
Bake in the oven for 40 minutes at 200°C until golden brown.

INGREDIENTS:
• 3-4 Tsp Oil
• 1 Tbsp Ginger Garlic Paste
• 2 Medium Tomatoes
• 2 Tsp Red Chilli Powder
• 1 & 1/2 Tsp Mixed Italian Herbs
• 1/2 Cup Zucchini
• 1/2 Cup Sweet Corn
• 1/2 Cup Red Bell Pepper
• 1/4 Cup Yellow Bell Pepper
• 3/4 Cup Broccoli
• 1 Small Potato
• Salt to Taste
• 1 Cheese Slice
• 3/4 Cup Mozzarella Cheese
• Some Fresh Coriander
------------------------------------------------------------------------
BAKING INSTRUCTIONS:
Kadhai/Cooker (No whistle & gasket): Preheat at medium flame for 10 min. Bake at medium flame for 10 min & then at low flame for 5-6 minutes.
OTG/Convection: Preheat at 200°C for 10 min. Then bake for 10-12 min.
