Ukrainian Holubtsi Recipe (stuffed cabbage rolls):
I’ve combined a few different recipes to form my own…but this one comes closest to the Holubsti my husband and I had when we visited Sevastopol, Ukraine (now part of Russia) 13 years ago. There’s so many delicious variations of this dish though, you can even leave out the pork for a nice vegetarian dish, too :) This dish would go nicely with a side of Classic Ukranian Olivye Salad!
Olivye Salad Recipe (Classic Ukrainian Potato Salad)
Ingredients-
Cabbage Rolls:
1 ½ Lbs Ground Pork
1 Large Head of Cabbage
1 Cup Uncooked Rice
1 large Onion ( I used two small ones)
2 Large Carrots
2 Garlic Cloves, Minced
1 tsp of Freshly Ground Black Pepper
2 tsp Salt
¼ Cup Mayonnaise
1-2 Tbsp Butter
Creamy Sauce:
¾ Cup Ketchup
2 Cups Chicken Broth ( I used homemade…the recipe is linked below).
3 Tbsp Sour Cream
A Pinch of Salt
Freshly Ground Black Pepper
Instructions: Cooking the Cabbage:
Cut out the core from a large head of cabbage, discard the top few cabbage leaves. Add cabbage to a large pot and cover with water. Bring to a boil and cook 5 minutes. Turn cabbage over. Continue cooking and peel off any leaves that have lightly softened but not mushy. Continue until most of the cabbage leaves are cooked.
Preparing the Filling:
Boil rice for about 10 minutes, until it starts to soften. Make sure not to overcook. The rice will finish cooking in the oven. Drain water and rinse rice under cold water. Place in large bowl. Saute onions with 2 Tbsp butter over medium heat. Wash, peel & grate carrots. Add these to onions until carrots are tender. Next, add your garlic and cook for 1 minute. Remove from heat and set aside to cool.
Stuffing the Cabbage Rolls:
In a large bowl, combine the rice, ground meat, sautéed vegetables, salt & pepper, dill and mayonnaise. Mix well to combine.
Once cabbage leaves cool, take each leaf and remove the hard rib. Cut leaves into two or three parts. On the bottom of a casserole dish, add a few unused cabbage leaves. Take one of the leaves, add about a TBSP of filling to the cabbage and begin rolling make sure to tuck in the sides while rolling.
Place into the casserole dish with the extra leaves on the bottom. ( I had a lot of filling left over, so you can either freeze the filling, or cut the filling recipe in half).
Creamy Sauce:
Bring ketchup to a slight boil in a small saucepan. Add the broth, sour cream, heavy whipping cream, salt, pepper and mix vigorously & let simmer for only about 30 seconds. Once sauce cools, pour over the cabbage rolls.
Bake in oven 375°F for 1 ½ hour. Place foil loosely on top of the casserole for the last half of cooking time. The top cabbage leaves will turn a nice brown color, and the cabbage rolls will be tender and soft.

Golubzy/Russian Stuffed Cabbage Rolls
Stuffed Cabbage Rolls is a a common dish to the cuisines of the Balkans, Central, Eastern Europe, Azerbaijan and Iran, as well as Middle East and West Asia and Northern China.
But is is probably the most popular cabbage dish in Russia, after Borscht of course.
Stuffed Cabbage Rolls:
You will need:
1 cabbage head
For the sauce:
3 medium carrots(grated)
1 large onion
1 large can of San Marzano or any other type of canned tomatoes
5 cloves garlic(pressed)
½ cup of fresh dill and parsley
salt and pepper to taste
1 tbsp butter
2 tbsp cooking oil
Method:
Saute onion in butter and oil( you need 2 onions in total)
Add salt and pepper.
Reserve half for the filling.
In a large sauce pan, add cooking oil.
Add grated carrots and onion.
Add garlic and crushed tomatoes(reserve ½ cup of tomato puree for filling).
Add fresh herbs, salt and pepper.
Set aside.
Filling:
1 lb ground beef
1 lb ground pork
1 onion
1½ cups of rice(cooked to al dente)
fresh herbs(parsley and dill)
½ cup tomato puree
¼ cup cold water
salt and pepper to taste
Combine all ingredients and set aside.
Prepare cabbage leaves.
Trace the core of whole cabbage around with sharp knife.
Place it in a large pot with boiling water core side down.
Remove some of the outer leaves as they start cooking and place them on the paper towel. Repeat the process until you left with pretty much just the core.
To make rolls:
Place a generous amount of filling on the cooked cabbage leef.
Roll tight.
In a large pot, add some of the sauce, then cabbage rolls, then sauce again, then cabbage rolls.
Cover with more sauce and simmer on a low heat for 45 minutes.
Serve with sour cream and fresh dill!

UKRAINIAN UNSTUFFED (LAZY) CABBAGE ROLLS | my grandma's recipe
Today I'm sharing my grandma’s Ukrainian Unstuffed Cabbage Rolls made with any ground meat, rice, chopped cabbage and savory tomato sauce. She would roll cabbage rolls before work but on busy days she made this lazy man version. ⬇️⬇️⬇️⬇️ CLICK FOR RECIPE ⬇️⬇️⬇️
►INGREDIENTS:
1 large onion, chopped
4 garlic cloves, minced
1 tbsp oil
1 lb ground turkey or any meat
1 cup brown rice, uncooked
3 lbs cabbage, coarsely chopped
28 oz can tomato sauce, low sodium
14 oz can diced tomatoes, low sodium
2 cups water or any low sodium stock
1 tbsp oregano, dried
1 tsp thyme, dried
1 tbsp vinegar
1 tbsp honey, maple syrup or sugar
1 tsp salt
Ground black pepper, to taste
3 bay leaves
Fresh dill, parsley, green onions and yogurt/sour cream for serving

►DIRECTIONS:
1. Preheat large and very deep non-stick skillet or 5-6 quart Dutch oven on medium-high heat and swirl oil to coat. Add onion and garlic; cook for 5 minutes, stirring occasionally.
2. Add turkey, rice, oregano, thyme, salt and pepper; cook for 10 more minutes, breaking into small pieces and stirring often.
3. Add broth, tomato sauce, diced tomatoes, vinegar, maple syrup, cabbage, bay leaves and stir well. Bring to a boil, cover, reduce heat to low and cook for 60-70 minutes. Do not open!
4. After check if rice is cooked and if not (mine was) add 1/4 cup water, cover and cook for another 5 - 10 minutes.
5. Serve warm topped with Greek yogurt and herbs.
