Silky Vareniki Ukrainian Dumplings with Meat and Onions.
A fine, silky pasta dough, juicy peppery filling - these are as good as they get !
Delicious, divine, scrummy, yummy. Practical, economical and quick too - as they are suppose to be large. Make ahead if you like - they freeze very well.
To feed a family of 4.
The filling:
500 g stewing beef, 1 large onion - 200 g. If you have bay leave and carrot - add it to the meat as it cooks too. Black pepper, salt - plenty.
The dough: 3 cups of flour, 1 cup of boiling water, 1 egg, salt. I used 250 ml cup.

- куряча печінка – 900 гр

- цибуля – 150 гр
- вершкове масло – 100 гр
- вершки (молоко, бульйон) – 100 гр
- рослинна олія – 2 ст.л. – 20 гр
- свіжий часник – 10 гр
- сіль – 1 ч.л. – 8 гр
- мелений перець – 0,5 ч.л. – 2 гр
- мелений коріандр – 0,5 ч.л. – 2 гр

In this video, I'll walk you through,
The very tempting and easy to make recipe with liver.
You can use chicken or pork liver as well!
Ingredients
2lb beef liver
1/4 cup flour
3 eggs
2 tbsp sour cream
1tsp salt
3 carrots
3 onions
3 bay leaves
1 cucumber
1/2 cup sour cream
1/3 cup mayo
2-3 garlic cloves
Green onions
Cook onions and carrots until soft, add bay leaves and let it cool. Wash and clean liver. Add flour, eggs 2 tbsp sour cream, salt to blended liver and combine. Make liver pancakes and let them cool. Grind cucumber. Mix together sour cream, mayo and garlic. Assemble our cake. Liver pancake-sauce-cucumber-carrots+onions and continue. Garnish with green onions. For better taste let cake rest in the fridge for couple hours or overnight.
