Makes 16
INGREDIENTS
2 tbsp oil
½ cup IMBO Butterfly Popcorn
6 slabs (480g) milk chocolate
1 tin (385g) condensed milk
½ cup speckled eggs
½ cup mini marshmallows
METHOD
1. Line the base and sides of a 20cm square dish with baking paper slightly hanging over the rim of the dish.
2. Heat the oil in a heavy-based pot and add in the IMBO Butterfly Popcorn kernels. Stir well, cover with a lid and allow to pop. Remove the popcorn from the heat when the pops are 2 seconds apart.
3. Break the milk chocolate slabs into a medium heat-proof mixing bowl and add in the condensed milk. Place the bowl over a small pot of simmering water and stir until melted, about 8-10 minutes. Remove from the heat and allow to cool.*Chef’s Tip: Steam can make the chocolate seize, so be careful of the escaping steam.
4. Add ¾ of the speckled eggs, marshmallows and 1½ cups of the popped popcorn to the fudge mixture. Gently mix to combine without breaking the popcorn.
5. Spoon and press the fudge mixture into the prepared tin. Scatter the remaining speckled eggs and ½ cup of popcorn over the fudge and gently press down. *Chef’s Tip: Enjoy the leftover popcorn as a snack!
6. Allow the rocky road fudge to set in the fridge for at least 3 hours.
7. Using a serrated knife, cut the fudge into 16 evenly-sized squares (4x4cm). *Chef’s Tip: A knife dipped in hot water makes for easy slicing!
8. Serve the rocky road fudge with a glass of milk and ENJOY! *Chef’s Tip: This makes for the perfect Easter gift!

Chef Salma Hack, contestant from the PBS Cooking Show The Great American Recipe visits Tropical Isle Restaurant and Bakery in Little Guyana for one of their monthly pop up events!
Salma prepared a delicious Guyanese fudge. Her recipe that takes about 30 minutes, sugar, butter, evaporated milk, essence and a lot of arm muscle was indeed a treat for all that attended! Thanks to owner Danny from Tropical Isle restaurant all guests received free fudge coffee and lots of other sweet Guyanese treats like Pinetart, cassavapone, chiney cake, mithai and more! Easy Jackfruit Fudge Cake | Recipe | Homemade | Tropical Fruit Cake | Sadiya and Sarah
We were so busy with our exams and school that we were having a hard time to spent on our channel. However, we're finally back with our favourite tropical fruit cake recipe, Jackfruit fudge cake. This recipe will satisfy the craving of fudge and jackfruit lovers.

Jackfruit cake
Ingredients:-
2 eggs
2 cups of jackfruit purée
1 1/2 cups of flour
1 1/2 cups of sugar
1 cup of skimmed milk powder
1 cup of melted butter
1 teaspoon of baking powder
Coconut shreds
How to make it:
1.First beat the eggs until foamy.
2.Then add the rest of the ingredients. The batter should be thick, but should slide off the spatula. Cover the batter with plastic food wrap and leave for at lest 2 hours.
3.Next, butter and flour a 9 springform pan. Divide the batter and bake at 180*C oven for 20-25 minutes. Once it's baked and cooled, decorate with more coconut flakes and enjoy!
***If you love fudge consistency cake, bake for 20 minutes, if you love firm moist cake, bake for 30 to 40 minutes.

INGREDIENTS
5 slabs (80g each) NESTLÉ Milkybar Original
¾ tin (289g) NESTLÉ Full Cream Sweetened Condensed Milk
For The Strawberry Milkshake Fudge
1 cup NESTLÉ Nesquik Strawberry Flavoured Drink
1-2 drops pink food colouring (optional)
2 tbsp red and pink cake sprinkles (optional)
For The Chocolate Milkshake Fudge
1 cup NESTLÉ Nesquik Chocolate Flavoured Drink
2 tbsp chocolate, red and pink cake sprinkles (optional)
Serving suggestion:
Strawberries
*Microwave cooking times may vary due to wattage; use the timings below as a guide.
METHOD
1. Line a square baking dish (20cm) with baking paper, so that the baking paper hangs over the sides.
2. Break the slabs of NESTLÉ Milkybar Original into blocks and add it to a large heatproof bowl along with the NESTLÉ Full Cream Sweetened Condensed Milk.
3. Microwave the mixture on high for 1-2 minutes until melted. Stir in 30 second intervals. *Chef’s Tip: For testing we used a 700W microwave.
For The Strawberry Milkshake Fudge:
4. Combine the NESTLÉ Nesquik Strawberry Flavoured Drink with 2 tablespoons of hot water to form a paste. *Chef’s Tip: Add a few drops of pink food colouring, if preferred!
For The Chocolate Milkshake Fudge:
5. Combine the NESTLÉ Nesquik Chocolate Flavoured Drink with 2 tablespoons of hot water to form a paste
6. Whisk the Nesquik paste into the melted chocolate mixture. *Chef’s Tip: Add a splash of warm water if the mixture is too thick!
7. Pour the fudge into the baking dish and smooth out the top with the back of a spoon.
For The Strawberry Milkshake Fudge:
8. Scatter the red and pink cake sprinkles on top of the fudge.
For The Chocolate Milkshake Fudge:
9. Scatter the chocolate red and pink cake sprinkles on top of the fudge.
10. Refrigerate for 4-5 hours or overnight until firm.
11. Lift the baking paper to remove the fudge from the baking dish. Slice the fudge into 64 cubes that are about 2cm in size. *Chef’s Tip: For easy cutting, warm the knife blade in some hot water and dry before using!
12. Serve the milkshake fudge with some fresh strawberries and ENJOY!

Green Tea Matcha Fudge- with yoyomax12
This fudge is unusual and easy to make.

This is fudge. Fudge is VERY sweet and is served in very small pieces to be consumed in small quantities just like any other candy. This is a cheater fudge that is very quick and does not require a candy thermometer. I realize that many will not call this real fudge.
450g or 16 oz white chocolate
1 can (300ml or 10oz) sweetened condensed milk
Pinch of salt (I didn't add this because I used salted pistachios)
1 tsp of green tea (matcha) powder
1/2 cup chopped and shelled roasted pistachios (I use salted, but unsalted would be fine)
Combine the above ingredients in a double boiler over simmering water. Stir until melted and smooth and pour into a greased 8x8 baking dish (or one lined with greased aluminum foil). Sprinkle nuts over the top an fresh gently to adhere to the fudge.
Allow to chill in refrigerator for 3 hours or until set. Cut into small pieces. Store covered in refrigerator.
