Skillet Candied Pecans!! Easy
Candied Pecans
4 cups whole pecans halves
2/3 cup Brown sugar packed
1 teaspoon Cinnamon
1 teaspoon salt
1 teaspoon Vanilla
1/4 cup Water
Cinnamon sugar
Cinnamon sugar ratio is 1/4 cup white sugar to 1 tbs cinnamon
1/2 recipe if using 2 cups of pecans
Put pecans on cookie sheet and toast in oven for 10 minutes @ 200 degrees
Take a large skillet add brown sugar, cinnamon,salt, vanilla and water and bring slowly to a simmer when it is boiling good add in toasted pecans and stir real good and make sure all are covered in the brown sugar mixture, be carful not to burn. Keep stirring until all liquid is gone, then stir for 1 more minute.
Spread onto parchment paper and use 2 forks to separate each pecan where they are stuck together.
Sprinkle cinnamon sugar over pecans while they are still warm and sticky , let cool off and setup and place in ziplock bags.

Pecan halves:
INGREDIENTS:
½ pound pecan halves
4 teaspoons butter
½ teaspoon salt
10 ounces chocolate melting wafers
INSTRUCTIONS
1. Place pecan halves on baking sheet on parchment paper with butter cut into small pieces.
2. Put baking sheet in 350 degree oven just until butter melts and then remove.
3. Toss pecans with butter to coat and then sprinkle with salt. Toss again to coat with salt.
4. Toast pecans at 350 degrees for 5 minutes and then toss again. Toast additional 3-5 minutes or until fragrant. Remove from oven and cool completely.
5. Melt chocolate melting wafers according to package directions – usually in 30 second intervals at 50% power, stirring after each interval until melted and smooth.
6. Drop pecans in chocolate a few at the time, stirring to completely coat and then removing with forceps or needlenose pliers.
7. Allow excess chocolate to drain off for 2-3 seconds each and then lay flat on clean parchment paper until chocolate is firm and set.
8. If desired excess chocolate can be trim from around edges of pecan halves with sharp knife.

These Dark Chocolate Pecan Caramel Turtle Clusters are the PERFECT sweet and crunchy no-bake candy, made with melted chocolate and homemade caramel over toasted pecans. They are naturally sugar free and gluten free. Such an easy homemade dessert for the holidays! ????
INGREDIENTS
½ cup (100g) allulose or powdered sweetener of choice
¼ cup (60g) salted butter
½ cup (125mL) heavy whipping cream
2 cups (220g) toasted pecans
3 ounces (80g) sugar-free chocolate (I use 100% Lindt Dark Chocolate)
1 tablespoon (15g) salted butter
2-4 tablespoons (25-50g) powdered erythritol (adjust according to taste)
Yields 12 pieces (macros per piece)
NET CARBS: 1.6g
FIBER: 2.7g
FAT: 24.6g
PROTEIN: 2.8g

** You can use powdered erythritol in the caramel sauce but pls take note that it will crystallize as soon as it cools down.

Caramel Pecan Clusters
1 pound, 230 grams or 500ml, pecan halves, toasted
12 ounces, 340g, semi sweet chocolate, chips or baking bars
2 tablespoons, 24g, shortening
Toast pecan halves in a single layer in a 350°F, 180°C, oven until they begin to brown and are fragrant, about 8 minutes. Or roast the pecans in a dry skillet on top of the stove turning often until they begin to brown. Do not let the pecans burn. Roughly chop the pecans. Arrange the nuts in small clusters on a parchment lined baking sheet.
Chewy Caramel
16 ounces, 450g, by weight, light brown sugar
2 cups, 473ml, light cream or half and half
1 cup, 237ml, light corn syrup
1 cup, 223g, lightly salted butter
1 teaspoon, 5ml, vanilla
Melt the butter in a 4 quart sauce pan over medium heat. Add the sugar, syrup, and half and half to the pan and bring the mixture to a gentle boil. Clip a candy thermometer to the side of the pan. Stirring frequently, bring the mixture to 242°F, 117°C. This will take close to an hour. Do not leave the caramel to boil unattended since the temperature can quickly rise, especially in the last few degrees. Once the caramel reaches temperature, remove the thermometer from the candy and the pan from the heat. Stir in the vanilla. Allow the caramel to cool in the pan until it can hold a mounded shape, about 15 minutes. Working quickly, scoop a tablespoon of caramel onto mound of pecans. Spraying the spoon with cooking spray helps prevent sticking. Excess caramel can be poured into a pan coated with cooking spray.
Allow the caramel to cool completely, about an hour. Melt the chocolate and shortening in the top of a double boiler. Spoon and smooth about a teaspoon of melted chocolate onto each pecan cluster.
Serve at room temperature.
