Chocolate Chow Mein Clusters
Make a tasty treat for today's HomeRECed activity!
Ingredients (makes about 8–10 clusters):
- 1 cup semi sweet chocolate chips
- 1 cup butterscotch chips
- 1 cup chow mein noodles
Materials needed:
- Microwave
- Spoon or spatula to mix and scoop
- 1 cup measuring cup
- microwave safe bowl
- pan
- parchment paper
Directions:
- Measure 1 cup of chocolate and butterscotch chips. Poor into microwave safe bowl
- Microwave until chips are melted, stirring occasionally to avoid burning
- Mix in 1 cup of noodles. Stir to coat noodles with the melted chips
- Scoop into clusters onto parchment paper to harden
- Store in container at room temperature or fridge

Haystack cookies are the perfect no-bake, quick-fix treat. But! So often, they just fall flat in the flavor department, and y’all we can do so much better without adding any fuss to the recipe and just a couple minor tweaks here and there. So today, we’re going to make BETTER haystack cookies, and it’s only going to take you a whopping 10 minutes in the kitchen.

Haystack cookies are perfect for holiday parties, potluck gatherings, not to mention they make precious (and budget-friendly) gifts. You can dress them up for literally any holiday, all you need are sprinkles!
So let’s kick this off with the basics: The ingredients. Here’s what you’ll need, butterscotch (or chocolate chips), peanut butter (not the healthy stuff), chow mien noodles, and miniature marshmallows.
Going into the recipe, here’s what you’ll want to keep in mind: When it comes to making the BEST #haystackcookies, the peanut butter, to chip, to salt ratio is absolutely everything.
WHAT YOU'LL NEED:
1 cup butterscotch chips
1/2 cup creamy peanut butter
1/8 teaspoon salt
1 (5 ounce) container chow mein noodles (about 2 cups)
1 cup miniature marshmallows
HOW TO MAKE HAYSTACK #COOKIES:
1. Ready your work surface with wax paper
2. Add peanut butter and butterscotch chips to the microwave and cook at 50% power, at 30-second intervals until melted. Some brands won’t melt as smoothly as others, so don’t panic if your chips don’t melt entirely.
3. Add the salt and vanilla and stir.
4. Add the chow mien noodles and marshmallows and fold to combine.
5. Transfer to a work surface and using two spoons and sprinkle (QUICK so they don't set up — only scoop 3-4 at a time), and allow to set up in the fridge.

Chocolate haystacks: the perfect holiday treat
INGREDIENTS
55g milk chocolate
45g dark chocolate
100g (2/3 cup) pumpkin seeds
100g (2/3 cup) dried cranberries
300g (1 2/3 cup) cereal sticks
Sea salt
METHOD
1. Put both kinds of chocolate in a small bowl. Microwave on high for one minute, then stir and microwave for 30 more seconds. Stir again.If still not melted, microwave another 30 seconds and stir until fully melted.
2. Stir in the pumpkin seeds, dried cranberries, and cereal until well-coated.
3. Drop by spoonfuls onto the prepared baking sheet and sprinkle with sea salt.
4. Refrigerate for 60 minutes.

BUTTERSCOTCH HAYSTACKS
1 1/2 cups butterscotch chips
1 cup honey roasted peanuts
1 cup chow mein noodles (or pretzel sticks)
Melt butterscotch chips in double boiler until smooth. Mix in peanuts and chow mien noodles, crunching up as you stir. Spoon onto wax paper in clusters. Let sit for 30 minutes until hardened. Can leave on counter, or in fridge.
