How To make Peanut, Raisin and Chocolate Clusters
1 Egg white
1/4 c Sugar
3/4 c Raisins
3/4 c Raisins
3/4 c Chocolate chips
Beat egg white till frothy, add sugar gradually; continue beating till light. Stir in raisins, peanuts and chocolate chips. Place in mounds on cookie sheet lined with parchment (or buttered and floured). Bake in preheated 375F oven 8 to 10 minutes or till browned. Cool. Makes: 24 candies

Mixed roasted nuts...1/2 cup or ~70g
White chocolate morsels...1/2 cup or 85g
Roasted cashew nuts...1/4 cup or ~40g

Betty's Rocky Road Nut Clusters
Betty demonstrates how to make Rocky Road Nut Clusters. These are confections made of marshmallows and toasted almonds, covered with semi-sweet chocolate.
Rocky Road Nut Clusters
12-oz. package semi-sweet chocolate chips
½ cup slivered almonds
small amount of butter for toasting almonds
1 heaping cup of miniature marshmallows
In the top of a double boiler, melt a 12-oz. package of semi-sweet chocolate chips, stirring constantly. Remove from heat and set aside to cool. Melt a very small amount of butter in a small saucepan. Add ½ cup slivered almonds. Heat over low heat, stirring occasionally, until almonds are a light brown color. Do not let the almonds get dark brown. Remove from heat and set aside to cool. When ingredients are ready to make into nut clusters, gently stir marshmallows and almonds into cooled, melted chocolate. Stir until marshmallows and almonds are completely covered by the chocolate coating. Drop by teaspoonfuls onto pan lined with waxed paper. Chill in the refrigerator at least 15 minutes, or until firm. Remove from waxed paper and place them on a nice serving plate. For longer storage, place them in a sealed container in the refrigerator. Chocolate NUT & RAISIN clusters/bites #shorts
In this video I show you how to make Chocolate NUT & RAISIN clusters/bites recipe (초콜릿 너트 및 건포도 클러스터) (수제 초콜릿 스낵). They are super fast to make and always delicious because you choose what ingredients to put inside. In England one of my favourite chocolate bars are fruit and nut so I love this cluster snack!
There are no instructions or ingredients because this recipe is so flexible but I will give you some tips below.
1. Use any chocolate but a good quality chocolate does taste better. If you want to be healthy then use a high cocoa chocolate. To melt your chocolate place in the microwave for 30sec intervals . Stir in between each blast! I only use a little chocolate at a time ( enough to make 5-6) for a treat for a few days:)
2. I always use the combination of some fruit and a nut. My favourite are hazelnuts but they are expensive in Korea so I use almonds or macadamia. I use about 1:1 ration of fruit and nuts.
3. Depending on the amount of chocolate you have melted is then how much of the other ingredients I will add. I keep adding until there is no more chocolate to cover them.
4. You can choose what size to make your clusters.
5. Leave in a cool place to dry and set. I keep them in my fridge as our apartment in Korea gets warm.

Chocolate covered raisins are one of those things that you either love or hate. Although I don’t think I’d ever buy them from the store, I do enjoy them when they find their way into my house. However, they can be FULL of sugar. Between the sugar from the raisin itself and the chocolatey coating, it can be a sugar overload after having just a few small pieces. I have a solution! How to Make Easy Chocolate Clusters
This is the easiest candy recipe in the world. They taste delicious and they cost cheap!
Any nuts can be used in this recipe - peanuts, cashews, walnuts, almonds, hazelnuts...
Ingredients:
1 cup chocolate chips (dark or semi-sweet)
or dark chocolate (grated)
1 tsp coconut oil
1/4 cup chopped walnuts
1/4 cup chopped almond
1/4 cup chopped pistachios
1/4 cup peanuts
1 tbsp dry cranberries or blueberries
Butter paper or waxed paper
