How To make Pecan Caramel Clusters
1 c Cream; Light
1 c Sugar
1/2 c Light Corn Syrup; Karo
1/4 ts Salt
3 tb Butter Or Regular Margarine
1/2 ts Vanilla
2 1/2 c Pecans; Chopped
6 oz Chocolate Chips; Semi-Sweet
Heat the light cream in a heavy 2-quart saucepan to lukewarm (110 degrees F.). Reserve 1/2 c cream and set it aside. Add the sugar, corn syrup and salt to the remaining 1/2 cup of cream in the saucepan. Cook over medium heat, stirring constantly, until the mixture boils. Slow stir in the reserved cream. Cook, stirring constantly, for 5 minutes. Stir in the butter, 1 tsp at a time, stirring constantly. Cook over low heat, stirring constantly, until the mixture reaches the soft ball stage, (234 Degrees F.) on the candy thermometer. Remove from the heat and stir in the vanilla. Arrange the pecans on a waxed-paper lined baking sheet. Drop the mixture by teaspoonfuls onto the pecans. As the clusters cool, remove with a metal spatula to another waxed-paper lined baking sheet. Push the remaining pecans together and repeat until all of the candy mixture is used. If the mixture becomes too thick, heat over low heat. Melt the chocolate chips over hot water and stir until smooth. Spread on the top of each pecan cluster. Let stand until the chocolate is set and store the candies in a cool place. Makes about 4 dozen.

INGREDIENTS
250g (2 cups) of pecans
90g (6 tbsp) of butter
110g (1/2 cup) of light-brown sugar
100g (1/2 cup) of sugar
150g (1/2 cup) of condensed milk
165g (1/2 cup) of light corn syrup
Vanilla essence
300g of dark chocolate
METHOD
1. Spread pecans out onto a baking tray covered with parchment paper and bake for 5-10 minutes. Once cooled, roughly chop the pecans and set aside.
2. Place butter in a large microwave-safe bowl and heat in the microwave until melted (about 2 minutes).
3. In a bowl with butter add brown sugar, granulated sugar, condensed milk, and corn syrup and stir well to combine. Return bowl to microwave and cook mixture on high power for 5 to 6 minutes.
4. After time has elapsed remove the bowl from the microwave and stir vanilla into the hot caramel. Stir in chopped pecans.
5. Add spoonfuls of the mixture onto the parchment paper-lined baking sheet to create individual mounds of caramel candy. (for about 20 candies). Refrigerate until set, about 20 minutes.
6. Pour the chocolate into the microwave-safe bowl and transfer for 2 minutes into the microwave.
7. Drop a cluster into the melted chocolate and with the help of two forks coat it all over. Lift the cluster up with a fork, and tap it several times to allow excess chocolate to fall through the tines of the fork, into the bowl.
8. Place dipped clusters on the baking tray covered with parchment paper to set up. Allow to set up in the fridge (for about 30 minutes).
9. After 30 minutes when the chocolate turtles are firm remove them from the fridge and serve.

2 tablespoons milk or heavy cream
Cooking spray oil for pan
Note:
***To melt the Caramel place unwrapped caramel in a microwave safe dish add 2 tablespoons of milk or heavy cream. Heat on high for 60 seconds, stir and repeat in 10 second intervals until completely melted and slightly runny.
***To melt chocolate place in microwave safe dish heat on high 60 seconds, stir and continue to heat on high in 6 second intervals until melted and smooth.
***If Caramel or Chocolate start to set while preparing the candy, microwave again for 10 seconds at a time until desired consistency is reached.
