Caramel Apple Crisp Cheesecake
This Caramel Apple Crisp Cheesecake is one of the most decadent fall desserts you can ever prepare. A cookie crust followed by a creamy caramel cheesecake layer, topped with spiced apples and crispy crumble on top, all drizzled with more salted caramel sauce. It is absolutely heavenly, an amazing combination of flavors and textures.

Ingredients
Makes about 10-12 servings
Salted Caramel Sauce
1 cup (200g) sugar
1/4 cup (60ml) water
1/2 cup (120g) whipping cream
2 tbsp (30g) unsalted butter, room temperature
1 tsp (5g) vanilla extract
1 tsp (5g) salt
Crust
7 oz (200g) digestive biscuits or graham crackers
2 tbsp (30g) sugar
1/4 cup (60g) unsalted butter, melted
Caramel Cream Cheese Filling
25 oz (700g) cream cheese, room temperature
3 tbsp (45g) sugar
1/2 tsp (2g) salt
1 tsp (3g) cinnamon
lemon zest from 1 lemon
1 tsp (5g) vanilla extract
1 1/2 tbsp (15g) flour
1/3 cup (80g) sour cream
1/3 cup (80g) caramel sauce
3 large eggs, room temperature
Apple Filling
3 medium apples (about 250g) - peeled, cored, diced
1 tbsp (15ml) lemon juice
2 tbsp (30g) brown sugar
1 tsp (3g) cinnamon
1/4 tsp (1g) nutmeg
Crisp Topping
1/2 cup (50g) rolled oats
1/2 cup (63g) flour
1/4 cup (60g) butter, melted
1/3 cup (70g) brown sugar
1 tsp (3g) cinnamon

INGREDIENTS
FOR THE CRUST
2 c. all-purpose flour
1/2 c. firmly packed light brown sugar
1/2 tsp. ground cinnamon
pinch of kosher salt
1 c. unsalted butter, softened
FOR THE CHEESECAKE
3 8-oz. blocks cream cheese, softened
3/4 c. sugar, plus 2 tablespoons, divided
3 large eggs
1 tsp. pure vanilla extract
pinch of kosher salt
3 granny smith apples, peeled, cored and diced
1/2 tsp. ground cinnamon
FOR THE STREUSEL TOPPING
3/4 c. firmly packed brown sugar
1/4 c. granulated sugar
1/2 c. all-purpose flour
1/2 c. old-fashioned oats
1/2 c. butter, softened
1/2 tsp. cinnamon
Caramel, for serving
DIRECTIONS
1. Preheat oven to 350°. Line a 9-x-13” baking pan with parchment paper.
2. Make crust: In a large bowl, whisk together flour, brown sugar, cinnamon and salt. Add butter and use your hands, or a pastry cutter, to cut the butter into the flour mixture until it’s crumbly and moist. Press into prepared pan and set aside.
3. Make filling: In a large bowl, beat cream cheese and 3/4 cup sugar until light and fluff. Add eggs, one at a time, beating well between each addition. Mix in vanilla and salt. Pour over the crust.
4. In a small bowl, toss together apples, 2 tablespoons sugar and cinnamon. Set aside.
5. Make streusel topping: In a medium bowl, whisk together brown sugar, sugar, flour and oats, then cut in butter with a fork or pastry cutter.
6. Scatter apples on top of the cheesecake mixture, then top with oat mixture.
7. Bake until the cheesecake is only slightly jiggly in the center, about 55 minutes. Let cool completely, then refrigerate for at least 2 hours.
8. Before serving, drizzle with caramel sauce and slice into squares.

2¾ cups apple fruit filling, divided
9 or 10-inch graham cracker crust (prepared)
8 oz cream cheese, softened
½ cup sugar
¼ tsp vanilla extract
2 eggs
¼ cup caramel topping
12 pcs pecans, halved plus 2 tbsp chopped pecans
⬇️ How to make Caramel Apple Cheesecake ⬇️
0:29 Preheat oven to 350 degrees F.
0:32 Add 2 cups of apple fruit filling to a prepared graham cracker crust then spread evenly. Set aside.
0:50 Beat together the cream cheese, sugar, and vanilla until smooth.

1:31 Bake for 35 minutes or until the center is set. Allow to cool down.

Apple Pie Cheesecake Recipe | Homemade Caramel Sauce
Creamy cheesecake with a cinnamon apple layer in the middle and topped with a caramel sauce. Delicious!
Apple Filling
2 Granny Smith apples, peeled and diced
¼ cup brown sugar
1 Tbsp. butter
1 Tbsp. cornstarch
1 tsp. cinnamon
Pinch of salt
1/3 cup apple cider or apple nectar
Cook until apples are fork tender. Set aside.
Graham Cracker Crust
2 sleeves of graham crackers, crushed
2 Tbsp sugar
½ cup butter, melted
Combine and press into 9 ½” springform pan. (Lined with Demarle/Bon Cook large mold if you have one). Bake @ 350*F for 8 minutes
Cheesecake
3 packages cream cheese
4 Tbsp. cornstarch
1/3 cup sugar
1 cup sugar
1 Tbsp. vanilla
2 eggs
½ tsp. cinnamon
2/3 cup heavy cream
Beat one package of cream cheese, cornstarch and ½ cup sugar until smooth. Add two other packages of cream cheese, one package at a time. Scraping down the bowl after each addition. Add sugar and vanilla. Beat until combined. Add one egg at a time, then cinnamon and heavy cream. Do not over beat after adding cream. Bake @ 350*F in water bath for 1 hour 15 minutes. Remove from oven and hot water. Cool for 1-2 hours until no longer warm. Transfer to refrigerator and chill for several hours.
Caramel Sauce
½ cup sugar
¼ cup water
2 tsp. corn syrup
¼ cup heavy cream
¼ tsp. sea salt
1 tsp. vanilla
Bring sugar, water and corn syrup to boil. Cook until mixture turns amber brown. Slowly add cream, stirring constantly. Stir in sea salt and vanilla. Cool to lukewarm before using.

Here is what you'll need!
CARAMEL APPLE CRISP CHEESECAKE
Serves 12
INGREDIENTS
Crust
2 cups graham cracker crumbs
⅛ cup brown sugar
⅓ cup butter, melted
Filling
16 ounces cream cheese, softened
¼ cup brown sugar
¼ cup white sugar
2 tablespoons cornstarch
1 teaspoon cinnamon
¼ teaspoon ginger
1 teaspoon vanilla extract
2 green apples, peeled and thinly sliced
Topping
¼ cup rolled oats
¼ cup flour
¼ cup brown sugar
1 teaspoon cinnamon
2 tablespoons butter, melted
Caramel sauce
PREPARATION
Preheat oven to 350°F/180°C.
In a bowl, mix the crust ingredients. Press into the bottom of a greased 8-inch springform pan. Bake for 5 minutes.
In another bowl, mix all the filling ingredients except the apples. Spread over the graham cracker crust, then layer the apple slices on top.
In another bowl, mix all the topping ingredients except the caramel, and sprinkle evenly over the apple layer. Bake for 30 minutes.
Drizzle on caramel sauce.
