How To make Taffy Apple Cookies
2 sticks plus 2 tbs butter
( beat well)
8 tablespoons powdered sugar
2 egg yolks :
( beat well)
3 cups carefully measured flour..
****** 12 ounces Caramels
1/4 cup milk
cocktail peanuts -- crushed
Mix ingredients. Beat well. Form small balls about the size of a level teaspoon . Bake on ungreased cookie sheet. BAke at 375* 12-15 minutes. Let cool. Put in a ROUND toothpick in the center. Makes 90 mini cookies.
Melt caramels in milk in double boiler. Do not use regular pans as the caramel will get hard. Dip the bottom half of cookies in caramels. Then dip into fine p eanuts. Place into mini paper cups. (1 3/4 inch size) Serve or freeze. These ar e adorable! Leslie
NOTE: These little cookies look just like mini taffy apples. They look really c ute on a plate for fall company or in mini cupcake liners for school open house .

Caramel Apple Cookies | Simple & Delicious Fall Recipe | Crowd Pleasing Cookies!
Caramel Apple Cookies
1 pouch (17.5 oz) of sugar cookie mix
1 cup of caramel bits
½ cup of chopped dried apple
1 tablespoon of apple cider instant drink mix
1 teaspoon ground cinnamon
1 stick of unsalted butter, softened
1 egg, room temperature
Pre-heat oven to 350°F.
In large bowl, combine cookie mix, softened butter, egg, apple cider drink mix and cinnamon. Stir in apple pieces and caramel bits. Shape dough into 1-inch balls. Place 1 inch apart on parchment lined cookie sheets OR shape into balls and then flatten.
Bake 10 to 13 minutes or until edges are set and light golden brown. BE CAREFUL NOT TO OVERBAKE. Let cookies cool for a few minutes before removing them from the cookie sheet. Store in airtight container.
*** If your cookies get too hard, place them in an airtight container with a slice of bread overnight. They will be softer in the morning. ***

How to Make Caramel Apple Oatmeal Cookies

Preheat over to 350°F.
In a Bowl Combine and mix with an electric mixer
1 cup (2 sticks) butter, softened
2 cups brown sugar
Then add and beat until well combined:
2 large eggs
1 teaspoon Vanilla extract
Slowly add and Beat until light and fluffy:
2 1/2 c. all-purpose flour
1 t. baking soda
½ t. each cinnamon, all spice, nutmeg & cardamom
1 c. Uncooked Old-Fashioned Oats
1 bag of caramel bites
2 small Granny Smith Apples & 1 medium Honeycrisp or Pink Lady Apples diced into small cubes.
Line baking sheets with parchment paper and set aside..
Place large scoops of dough a few inches apart on the prepared baking sheets. Bake for 15-18 minutes or until golden brown
Let cool on cookie sheets for 10 minutes before transferring to a wire rack to cool completely.
(Optional) Drizzle on the caramel on top of the cookies
