Ingredients:
2 medium eggs
pinch of salt
30 g sweetener(stevia/or your choice)1/4 cup
1 teaspoon vanilla paste/ vanilla extract
120 g yogurt (1/2 cup)
50 ml vegetable oil(1/5 cup)
1 apple
70 g blueberries(1/2 cup)
100 g rolled oats(1 cup)
7 g baking powder(1/2 tbsp)
bake 20-25 minutes at 180°C/ 360°F

1/3 to 1/2 cup (70-100 g) coconut sugar
1/2 cup (50 g) unsweetened cocoa powder
1 tsp baking powder
1/4 tsp baking soda

-1 Cup /120G AP Flour
-3/4 Tsp Baking Powder
-1/4 Tsp Baking Soda
-1/4 Tsp Salt
Wet
-1-2 Ripe Bananas (100G-200G)
-2 Tbsp / 30mL Vegetable Oil
-2Tbsp / 30G Melted Unsalted Butter
-1/4 Cup / 50G Brown Sugar
-1/4 Cup / 50G Sugar
-2 Tbsp / 30mL Buttermilk (Room Temperature)
-1/2 Tbsp Vanilla Extract
-1 Large Egg
Topping
-2 Tbsp / 25G Sugar
Bake 425F / 218C for 8 mins then reduce heat to 350F / 175C for 6-8 Mins or golden brown.

BAKED APPLE OATMEAL CUPS RECIPE
3 cups old-fashioned rolled oats
1 teaspoon baking powder
1/2 teaspoon cinnamon
1 cup organic buttermilk (you can sub any milk you prefer)
2 eggs, beaten
1/2 cup applesauce (I used cinnamon applesauce)
1 large apple, chopped (1 heaping cup)
1/4 cup raisins
Preheat oven to 350ºF. Spray a 12-count muffin pan with non-stick cooking spray or coat with coconut oil and set aside.
In a large bowl combine oats, baking powder, cinnamon, buttermilk, eggs, and applesauce. Mix together until everything is well incorporated.
Add in chopped apple and raisins and gently toss until they are evenly distributed throughout the batter.
Divide batter amongst all 12 muffin cups and pop in the oven for 25-30 minutes or until they have set through and are golden brown on top.
Cool and enjoy.
*I like to store these in an airtight container and keep them in the fridge. They will last a good week stored this way.

I have tried to come up with a refined sugar free muffin recipe and I am really pleased with how these healthy breakfast muffins turned out. These Refined Sugar Free Muffins are soft and fluffy, sweetened with banana and honey and packed with berries and oats. The recipe is very easy and very quick to prepare, made using just one large bowl as ingredients are added one at a time. You can definitely make variations to these breakfast muffins, add different fruits or replace fruits with some bittersweet chocolate or nuts.

Soft, moist, and Eggless Banana Walnut Muffins! This easy and vegan muffin recipe comes together in minutes, and they bake up perfectly every time!
They’re crispy on the outside, soft and fluffy on the inside. You only need a couple of ripe bananas and a few basic pantry ingredients to get started.
You don’t need fancy equipment – just use one bowl and stir everything together with a spatula!
Important notes -
Don’t over mix the batter! This is my TOP TIP for the perfect fluffy muffins!
If you fewer bananas don’t worry, that will work too, there will just be slightly less banana flavor in these muffins. You can use 1 extra banana too to get more flavors of banana.
Adjust the sugar according to the sweetness of the bananas. If the bananas are not very ripe then use a bit more sugar to adjust the sweetness of these muffins.
You can easily double or tripled this recipe.
To get fluffy muffins with the nice dome shape on top, fill the muffin pan or the liners up to the very top and get them in the oven immediately.
You can flavor these muffins with cinnamon, nutmeg, cardamom, or saffron.
