This loaf is a cake with lots of dried fruits (raisins, dried cranberries, dried cherries, dates, figs, prunes, and apricots) and nuts (walnuts, pecans, almonds, and/or hazelnuts) with just enough batter to hold it all together. What I also love about this cake is that it does not call for butter or even oil, instead, the ingredients are bound together with flour and beaten eggs.

BEST EVER BANANA NUT MUFFINS
Ingredients
For the muffins
* 3 large ripe bananas
* 3/4 cup white sugar
* 1 large egg
* 1/3 cup vegetable oil
* 1 1/2 cups all purpose flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1/2 teaspoon cinnamon
* 1/4 teaspoon nutmeg (optional)
* 3/4 cups chopped walnuts
For the topping
* 3/4 cups chopped walnuts
* 2 tablespoons brown sugar
* 1 tablespoon melted butter
Instructions
* Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners (or grease very well with butter or cooking spray if you prefer not to use paper liners).
* Mash the bananas in a large bowl and mix in the sugar and egg with a wooden spoon until well blended.
* Add the vegetable oil and mix well.
* Add the flour, baking powder, baking soda, salt, cinnamon and nutmeg, along with 3/4 cup of the chopped walnuts. Adding the walnuts with the dry ingredients helps prevent over-mixing.
* Mix everything together just until the flour disappears and the walnuts are distributed evenly throughout the batter.
* In a small bowl, combine the remaining 3/4 cup walnuts, brown sugar and melted butter and mix until the walnuts are coated.
* Spoon the muffin batter evenly into the 12 muffin cups and spoon a bit of the coated walnuts onto the top of each one, making sure the topping is well distributed onto the top of each muffin (not in one big clump or it might sink into the muffin as it bakes!).
* Bake for about 20-23 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center of one of the muffins comes out clean.
* Let the muffins cool in their tins for a few minutes before removing them to a wire rack to cool completely.

Hello! If you’re looking for a muffin that’s packed with nutrition and flavor, here’s the recipe for you. Try one for a quick breakfast or enjoy with a hot cup of peppermint tea for a satisfying afternoon snack.
This is a similar recipe to my chocolate chip and nut muffins, but this one uses blueberries and cranberries and no chocolate.
I use chia seeds, wheat bran, and white flour here, but you can substitute flaxseeds, oat bran, and your favorite flour if you like. Just be sure to have 2 cups of a flour/seed/bran combination and it should turn out fine. Play around with the recipe to get your favorite texture and flavor.
This recipe has only 1/3 cup of brown sugar, so it’s really a muffin and not a cupcake. I find a lot of bakery muffins are really loaded with sugar and taste more like cupcakes. Yes, cupcakes are delicious but when you want a muffin...
They also freeze well. I wrap them individually, place in an airtight container, and pull one out at a time.

▶️ RECIPE INGREDIENTS: (6 medium size muffins)
170g / 1 Cup Whole wheat flour
60g / 1/3 Coconut Sugar or Palm sugar (if you like it sweeter you can add 1/2 cup instead)
1 Teaspoon Baking powder
1/4 Teaspoon Baking soda
1/4 Teaspoon Salt (I have added pink Himalayan salt)
350g / 1+1/4 cup Mashed Banana
4 Tablespoon Olive oil
1 Tablespoon Ground Flaxseed
3 Tablespoon Water
1 Tablespoon White Vinegar
1 Tablespoon Vanilla extract
[Note for Non-Vegans: 1 Tbsp Ground Flaxseed + 3 Tbsp Water = 1 egg replacement]
Toppings:
Walnuts - chopped or nuts/seeds of choice
Semi-Sweet Chocolate Chips
▶️ 6 cup Muffin Tray

▶️METHOD:
Preheat the oven to 350F. Brush a 6 cup muffin tray with oil OR line it with muffin paper liners and set aside for later.
Add the whole wheat flour, coconut sugar. Baking powder, baking soda, salt to a bowl and mix it thoroughly. Set is aside. Now to another bowl, mash the banana and add olive oil, ground flaxseed, white vinegar, vanilla extract, water and mix it well until combined thoroughly. Now add the dry ingredients and mix it gently until just combined. (Please DO NOT over mix it, otherwise the muffins will turn out dense).
Scoop the batter into the muffin cups and top it with chopped walnuts/ semi-sweet or dark chocolate chips. Bake in a 350F preheated oven for about 35 minutes. The baking time depends on the heat/type of your oven so adjust the baking time accordingly. Once baked remove it from the oven and let it cool down. Enjoy it for breakfast or just as a healthy snack.
These muffins freeze very well and are perfect for meal planning.

Ingredients :
1 cup = 250 ml
Dry Ingredients :
1 Cup - Maida
1 tsp - Baking Powder
1/2 tsp - Baking Soda
Pinch - Salt
Seiive all the dry ingredients
Wet Ingredients :
1 Cup - Curd
3/4 Cup - Sugar Powder
Whisk Properly
1 tsp - Vanilla extract
Whisk Properly
1/2 Cup - Oil or melted butter
add Dry Ingredients and Whisk again Properly and mix it
1/4 Cup - Tutti Fruti
1/4 Cup - Cashew
1 tbsp - Maida
mix all together
add to the the batter by Cut n Fold method
pour mixture to the muffin liner with the help of icecream scoopet
and addb some chopped cashew and tutti fruti
Preheat the oven at 170 degree for 10 min and bake it for 17-20 min

Recipe:
2 cups flour
1/4 cup sugar
1/4 cup brown sugar
2 tsp baking powder
1/2 tsp salt
~wisk~
2 cups frozen blueberries !! :)
~Any chopped up fruit (min 1 cup) and nuts ( 1/2 a cup) will work too!! Or just add 1 Tbsp of cinnamon and make them cinnamon muffins !! :)
1 cup milk
2 eggs
~beat together~
1/2 cup of oil (vegetable or canola)
350 degress, middle rack of oven, 30-40 minutes.
~Do the toothpick test to see if they are done!!!!! :)
~Let cool in muffin tin for 5-10 minutes before removing!!! :)
