Red Velvet Sugar Cookies | No Chill Needed | Small Batch Cookie Recipe
Soft and Chewy Red Velvet Sugar Cookies Recipe

These soft and chewy red velvet sugar cookies are rolled in white sugar for the perfect sparkle and crunchy finish. These are super easy to make and come together in less than 10 minutes. No mixer and chilling needed!
You’ll need:
• ½ cup (112g) unsalted butter (melted & slightly cooled)
• 2/3 cup (138g) white sugar, plus more for coating
• 2 large egg yolks (room temperature)
• 1 tsp vanilla extract
• 1 tsp red gel food coloring (*see notes below)
• 1 ¼ (157g) cup all-purpose flour (*spooned & leveled)
• 4 tsp (8g) unsweetened cocoa powder
• 1 tsp cornstarch
• ½ tsp baking soda
• ¼ tsp salt
Makes 16 delicious cookies
:: HELPFUL HINTS ::
* Measure your flour correctly. Adding too much flour will result to dry and crumbly cookies when baked. Fluff the flour in the container before scooping it out. Lightly spoon the flour directly into the measuring cup until it mounds well above the top of the measuring cup. Using the back of the dinner knife (non-serrated side is facing the flour), sweep the knife over the top of the cup to remove the excess flour.
* For the best color and texture, I use a gel food coloring (Americolor brand). It has a thicker and robust hue and will not throw off the texture of the cookie by adding too much liquid. Feel free to adjust the amount of the gel food coloring (1/2 tsp to 1 tsp) as every brand varies.
* For the best and richer taste, opt for dutch-processed cocoa (which I used) It may not create the reddest red color, but the taste is utterly good. I find that using the regular cocoa produces the deep red color, but the chocolate flavor is too subtle.
* Allow cookies to rest on the baking pan for 3 to 5 minutes and transfer to wire rack to cool completely

0:09 In a pot, combine dates, raisins, apples and water.
0:18 Bring to a boil.
0:21 Reduce heat and continue to simmer for 3 minutes.
0:26 Sift flour, cinnamon, baking soda, and salt in a mixing bowl.
0:44 Add the apple mixture and mix well.
0:52 In another bowl, beat eggs and honey together.
1:06 Add the egg mixture to the apple mixture, and mix well.
1:16 Place each dough on the baking tray using an ice cream scoop.
1:27 Bake at 350 degF for 10 to 12 minutes.

My Favourite Butter Cookies – Happy New Year to all my dear Subscribers and Friends! I hope to bring you more wonderful treats recipes. I do understand cookie recipes are very easy with simple few ingredients. However, the precision of ingredients and method used will result in the outcome you desire. So here is my favourite version of butter cookie recipe. Enjoy!

FAQ: Why my cookies flattened while baking in the oven?
It might be due to the butter's condition. The consistency is very important if you're piping these cookies. Solution: You can fold in 1 or 2 tbsp of flour, then check if the consistency is slightly thickened. Do not over add the flour. Another way is after piping, you can pop them into the fridge for about 30min, just to hardened it a little, then bake it. If you find after adding 1 or 2 tbsp of flour is comfortable you can bake it straight away.
Ingredients:
this recipe yields about 20-22 cookies
113g (1/2 cup) unsalted butter, softened
60g (1/4 cup+1 tbsp) fine sugar
¼ tsp salt
1 egg yolk
1 tbsp heavy cream
1 tsp vanilla extract
125g (1 cup) cake flour
16g (2 tbsp) cornstarch
Piping tip: 1M
Instructions:
1. Preheat oven at 170°C/340°F.
2. In a large bowl, add the room temp (or softened) butter. Add sugar and salt. Mix them using a spatula so that the sugar the fly out. Then switch to an electric mixer. Mix until creamy, pale and fluffy.
3. Add the yolk, cream and vanilla extract. Mix till combined.
4. Sift the cake flour and cornstarch in 2 batches. Fold in using a spatula. Sift the remaining dry ingredients until the flour disappear.
5. Transfer the dough into a piping bag. I am using 1M tip. Double up the piping bag if yours is thin like mine. A thin piping bag will cause breaking of the bag. Also it will ease your piping.
6. Bake in preheated oven at 170°C/340°F for about 15-18 min. For 15min, the cookies might be softer than 18min bake, so it really depending on how crispy you desire your cookies to be.
7. Let it cool completely.
8. Cookies are ready to serve.
