Sugar Free Dairy Free Gluten Free Christmas Cookie Recipe
This is a super easy sugar free diary free gluten free Christmas Cookie Recipe! You literally can't tell that they're sugar, diary, and gluten free! They taste just like the not so healthy real thing ;-) And they are just as much fun to bake and decorate!
I make this easy healthy Christmas cookie recipe every year, along with the other not so healthy sugary holiday desserts. I love that this Christmas cookie recipe is simple and can be made quickly using minimal ingredients.
Even though this is a sugar free cookie recipe, you can use regular sugar if you are sensitive or intolerant to sugar substitutes. If you use regular sugar, use the same measurements.
Sugar Free Dairy Free Gluten Free Christmas Cookie Recipe: (inspired by Zuzka Light)
Ingredients:
2 cups almond flour
3/4 cup sugar substitute (I use monk fruit or erythritol) or regular sugar
1/2 tsp baking soda
1 tsp cardamom
1 tsp cinnamon
1/2 tsp ground ginger
pinch of salt
1 egg
1/2 cup avocado oil
Combine dry ingredients into large bowl and mix together until all clumps are gone.
Add wet ingredients and stir until a dough is formed. You may have to use your hands.
Roll dough into a ball and place in foil. Place in the freezer for 10 minutes or in the fridge for 1 hour.
While the dough is chilling, preheat the oven to 350 F.
Pull out two sheets of parchment paper.
After the dough is chilled, place on one piece of parchment paper and take the other piece and place on top of the dough. Start flattening out the dough with your hands and then you can use a roller pin to flatten the dough until it reaches about 1/2 inch thick.
Take some fun cookie cutters and cut dough into shapes.
Place on parchment lined cookie sheet.
Pop the cookies in the oven for 10-12 minutes or until the edges are golden brown.
Let the cookies cool all the way down before icing and decorating them.
(these cookies are already sweet on their own, but if you want to add the icing, go for it!)
Ingredients for the icing:
1 1/2 cups powdered sugar substitute (I use powdered erythritol) or regular powdered sugar
1 tsp vanilla extract
1/2 melted butter or coconut oil
A few tbsp of milk of choice to get the consistency you want
Combine all ingredients into a bowl and mix thoroughly. If you are using coconut oil, it may harden again as you add your milk into the mixture. You may need to put the bowl with all the ingredients into the microwave for a few seconds to soften it again.
Frost the cookies and decorate! Enjoy and have fun!

PEANUT BUTTER COOKIE RECIPE
(makes 12 cookies)
Ingredients:
1/2 cup natural peanut butter (125g)
1/4 cup honey or agave (60ml)
1/4 cup unsweetened applesauce (65g)
1 cup ground oats or oat flour (100g)
1.5 tbsp cornstarch or tapioca starch
1 tsp baking powder
NUTRITIONAL INFO (per cookie):
107 calories, fat 2.3g, carb 19.9g, protein 2.4g
Preparation:
In a bowl, add room temperature peanut butter, your sweetener and applesauce, beat with the mixer for 1 minute.
Add half of the oats, cornstarch and baking powder, and gently mix it in, until the dough starts to form.
Add the rest of the oats and mix until everything comes together.
If the dough is too sticky to work with, place the cookie dough in the freezer for 5 minutes.
Scoop the cookie dough (35-40 grams) and roll with your hands, you'll end up with 12 equal balls.
Flatten a bit and transfer to a lined baking tray.
Using a fork, press down each cookie to create authentic criss cross marks.
Bake cookies at 350F (180C) for 10 minutes.
Let it cool on a baking sheet for 10 minutes, then transfer to a wire rack.
When completely cool, serve and enjoy with your favorite milk.
