How To make Rhubarb and Nut Streusel Cake
1 1/2 c Sugar/divided
3 T Corn starch
3 c Diced fresh rhubarb
3/4 c Milk
1 T Vinegar
2 1/4 c All-purpose flour
3/4 c Butter
1/2 t Baking powder
1/2 t Baking soda
1/2 c Finely chopped nuts
1 ea Egg(beaten)
Combine 3/4 cup sugar and corn starch in medium sauce. Stir in rhubarb. Cook and stir over medium heat until mixture comes to a boil and thickens. Cool and set aside. Stir together milk and vinegar and set aside. Combine flour and remaining 3/4 cup sugar. Cut in butter until mixture is crumbly and set 1/2 cup of mixture aside. To remainder add baking powder, baking soda and nuts. Combine egg and milk mixture and add to dry ingredients, stir until just moistened. Spread 2/3 of the batter over the bottom and sides of a buttered 9" spring form pan. Spoon rhubarb filling over batter. Drop remaining batter over rhubarb by spoonful, sprinkle with reserved streussel mixture. Bake in preheated 350 F oven 50 minutes.

45g Plain Flour
30g Demerera Sugar
30g Melted Butter
¼ tsp Cinnamon
CRUMBLE
120g Cold Butter
180g Plain Flour
40g Caster Sugar
25g Demerera Sugar
Pinch of Salt
APPLES
650g Chopped/Peeled Apples
2-3 tbsp Caster Sugar
¾ tsp Cinnamon
Pinch of Cloves
BROWN SUGAR CUSTARD
3 Egg Yolks
90g Light Brown Sugar
30g Cornflour
Pinch of Salt
500ml Whole Milk
200ml Double Cream
1 tsp Vanilla

Rhubarb Pistachio-Streusel Bundt Cake combines the tart and tangy rhubarb with the sweet and nutty pistachio streusel. The cake is moist and not too sweet, with pockets of rhubarb tartness. So Yummy.

????½ cup coarsely chopped pistachios (60g):

Rhubarb Filling:
700 grams frozen Rhubarb or
500 grams fresh Rhubarb
30 grams flour
30 grams sugar (15 grams sugar if using frozen Rhubarb)
Cake Dough:
200 grams room-temperature butter
1 splash of vanilla extract
175 grams sugar
1/2 teaspoon salt
4 room-temperature eggs
200 grams whole wheat flour
1 teaspoon baking powder
25 grams ground flax seeds (optional)
25 grams ground chia seeds (optional)
Crumble/Streusel:
100 grams room-temperature butter
75 grams sugar
75 grams whole wheat flour
1 pinch salt
1 pinch cinnamon
50 grams chopped nuts of your choice (hazelnuts, almonds, pecans...)

1 ½ cups rhubarb
1 2/4 cup flour
½ cup brown sugar
2 teaspoons baking powder
½ teaspoon salt
Zest from one orange
1 egg
¾ cup milk
¼ cup oil
2 teaspoons vanilla
Streusel:
½ cup flour
¼ cup brown sugar
¼ cup cold butter
¼ teaspoon cinnamon
3 tablespoons sliced almonds
1. Cut rhubarb into small pieces.
2. Add flour, brown sugar, baking powder, salt and the zest of one orange to a bowl and whisk everything together.
3. Add the egg, milk oil and vanilla and mix.
4. Add the wet ingredients to the dry and mix until almost combined. Add the rhubarb and continue mixing until there are no streaks of flour.
5. Add 12 liners to a muffin pan.
6. Add all the batter equally to each muffin liner.
7. To make the streusel, mix the flour, brown sugar, cold butter, cinnamon and sliced almonds together in a bowl with your hands.
8. Add the streusel to the top of each muffin until it’s all used up.
9. Bake at 350°F for 20-25 minutes or until a toothpick inserted in the center of the muffins comes out clean.

We deem this sweet treat as a special one and we’re not the only ones in doing so. Indeed, people should use the sour-sweet mineral and vitamin-rich rhubarb stalks more often (no leaves allowed!). Here, we included it into a Bundt cake. The result was “wow!”
