Stifado Greek Stew Recipe with Chef Ranveer Brar
This hearty one-pot beef stifado recipe requires just five minutes of prep time but for the best results should be left to marinate for a few hours or ideally overnight, so you’ll need to plan ahead. Once the flavours have soaked into the beef, this stifado can be cooked in 30 minutes. This recipe serves between six to eight people, so is a great option if you have plenty of mouths to feed or if you like to batch cook recipes and freeze for later. Serve with rice, pasta or potatoes.
Marinate lamb shanks in a bowl with
1 cup tomato paste, 1 tbsp vinegar,
salt to taste and 2 roughly crushed pimentos
Warm 1 tbsp olive oil in a pan, add 2-3 bay leaves,
9-10 shallots, 7-8 garlic cloves and 2 sprigs rosemary,
Switch off the gas and add the marinated lamb to the pan
Cover the pan with aluminium foil and bake at 170°C for 1 1/2 hours
In a grill pan warm 1 tbsp olive oil and fry 40 gms halloumi cheese
Remove stifado from the oven, add grilled halloumi cheese on top
Serve Stifado with hot steamed rice.

Greek Beef Stew | The BEST Comfort Food!
This Greek-Style Beef Stew is one of the easiest stews you'll make. It's so versatile and it can go with any side! It's ready in 3 hours and it's sure to become a family favourite!
Recipe:
Braised Beef and Shallots (Stifatho)
Prep Time: 15 Minutes
Cook Time: 2.5 Hours
Total Time: 2 Hours, 45 Minutes
Serves: 4
2 lbs beef roast
4 tbsp olive oil
4 tbsp unsalted butter
1 medium onion, chopped
1 tbsp salt
2 garlic cloves, crushed
1 c. whole tomatoes, crushed (or crushed tomatoes)
½ c. red wine
2 tbsp wine vinegar
1 bay leaf
1 cinnamon stick
4 whole cloves
1 tsp sugar
½ lbs shallots
Preheat oven to 375 F.
Take a large pot roast and cut into about 3-4 inch cubes, set aside.
Melt butter and oil in a medium saucepan.
Add the whole shallots and roast them in the butter and oil for about 2 minutes.
Remove the shallots and put it in a bowl and set aside.
In the same saucepan, add the meat and brown both sides, about 10 minutes.
Remove the meat, and place it in a large baking dish or roast pan. Set aside.
In the saucepan, add chopped onion, red wine, red wine vinegar, garlic, bay leaf, cinnamon stick, and cloves. Simmer for about 3 minutes, or until the onions are translucent.
Add the red wine sauce to the top of the meat in the baking dish.
Add the crushed tomatoes and one more tablespoon of salt.
Cover the meat and sauce with aluminum foil and put it in the oven for 1 ½ hours.
Remove from the oven and add the shallots to the beef.
Cover once again and put in the oven for 1 hour.
Remove from the oven and make sure that the meat is fully cooked.
Serve with crusty bread and your favourite side!
Side suggestions: roasted potatoes, winter salad, or crusty bread.
