How To make Greek Style Macaroni Pie
175 grams macaroni
4 tablespoons olive oil
1 onion
finely chopped
2 cloves garlic :
crushed
2 ounces soya mince or Quorn optional
4 tomatoes :
chopped*
2 teaspoons dried oregano
1 teaspoon dried mint
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
125 grams feta cheese crumbled
salt and pepper :
to taste TOPPING: 50 grams butter or margarine
50 grams cornstarch
6 deciliters milk
175 grams feta cheese
2 eggs beaten
225 grams Greek yogurt
salt and pepper :
to taste
* I omitted the tomatoes, without harm.
Cook the macaroni according to the package instructions. Drain and set aside.
Heat the oil in a frying pan and fry the onion and garlic till soft.
Stir in the soya mince or Quorn (if using) and tomatoes, and fry for 2-3 minutes. Add the spices and herbs, and fry for a further minute. Remove from the heat and stir in the cheese and macaroni. Season to taste and transfer to a large square ovenproof dish.
Preheat the oven to 400F/200C. To make the topping, melt the butter in a pan, stir in the flour and cook for 1 minute. Gradually add the milk, stirring contantly until the sauce begins to thicken. Remove from heat and stir in the cheese. Quickly add the beaten eggs and yogurt, mix thoroughtly, season, then pour over the macaroni mixture.
Bake for 30 minute, then allow to cool for a few minutes. Cut into squares and serve with a green salad.

- 2 cups feta crumbs

• instructions:
- into a large bowl add the eggs and whisk
- then add the milk the feta brine
- into a casserole add the boiled pasta, the feta cheese, the black pepper and mix
- then add the egg/milk mixture over the pasta and mix
- bake into a preheated oven at 400F (200C) for about 30-40’ mins or until is golden brown
-when is ready let it cook for about 30’ mins, cut and enjoy

The Creamiest Greek Feta Cheese Pie (Bechamel Tiropita)

Ingredients
1/2 pound (#4) phyllo, at room temperature
4 oz (112g) butter, melted
sesame seeds for garnish
For the Filling:
4 tablespoons (50g) butter
4 tablespoons (50g) all-purpose flour
2 cups (500ml) milk
salt, to taste
freshly cracked black pepper, to taste
12 oz (350g) feta cheese
1 egg
Instructions
Preheat the oven to 350 °F, 180 °C. Grease the inside of a 9-inch round pie pan
Make the filling:
Add the butter to a saucepan and melt over medium-heat. Add the flour, whisk together and and cook over medium- heat for 1-2 minutes until toasted.
Add the milk, salt, and pepper, and whisk together. Cook until it comes to a boil and thickens enough to coat the back of a wooden spoon.
Remove from the heat.
Place the egg into a bowl and whisk to break it up. Add some of the hot cream mixture to the egg and whisk together. Add the egg mixture back to the pan and crumble the feta cheese into the sauce. Mix together and taste the cream. Adjust the seasoning if needed.
Assemble the pie:
Unwrap the phyllo sheets and unroll them. Take half of the phyllo sheets and roll them back up, wrap in plastic wrap and store in the refrigerator up to 4 days for another recipe.
Reserve 4 of the phyllo sheets for the top of the pie and layer the remaining sheets into the prepared pie making sure to drizzle each sheet with the melted butter.
Pour the cheese fillinf into the center and top with the remaining 4 phyllo sheets. Drizzle butter between the layers.
Gather all of the phyllo that is extended outside of the pan and tuck it into the sides. Score the top layers into 8 equal portions. Drizzle the remaining butter over the top and sides of the phyllo.
Sprinkle with sesame seeds and bake on the center rack of the preheated oven for about 45-55 minutes or until golden brown.
Allow the pie to set and cool to room temperature. About an hour or longer. Serve with olives. Kali Orexi!
Notes
Freezer Instructions: The cheese pie can be assembled and wrapped tightly with foil and then with plastic wrap as to not absorb any freezer odors. It will keep fresh in the freezer for 2 months.
Bake it frozen and covered with foil in a preheated 350 °F oven for 40 minutes. Remove the foil and bake until golden brown.

Ingredients for the Pasta:
◾ 500g Bucatini pasta No2 or Barilla No9
◾ 1 Tbsp olive oil
◾ 1 Tbsp unsalted butter
◾ 2 pinch of Salt
◾ 80g grated cheese Kefaloturi or Kaseri (or any cheese of your choice) to sprinkle on top.
Ingredients for the minced beef filling:
◾ 1k and 200g minced beef (Flank)
◾ 500g concentrated tomato juice
◾ 70g tomato paste
◾ 2 Big fresh tomatoes grated
◾ 2 onions finely chopped
◾ 1 green bell pepper cut in cubes
◾ 1 red horn pepper cut in cubes* (replace it with one more green bell pepper if you don’t have)
◾ 1 tsp honey (optional)
◾ 1/3 tsp cinnamon
◾ 4 Tbsp olive oil
