How To make Greek Style Macaroni Pie
175 grams macaroni
4 tablespoons olive oil
1 onion
finely chopped
2 cloves garlic :
crushed
2 ounces soya mince or Quorn optional
4 tomatoes :
chopped*
2 teaspoons dried oregano
1 teaspoon dried mint
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
125 grams feta cheese crumbled
salt and pepper :
to taste TOPPING: 50 grams butter or margarine
50 grams cornstarch
6 deciliters milk
175 grams feta cheese
2 eggs beaten
225 grams Greek yogurt
salt and pepper :
to taste
* I omitted the tomatoes, without harm.
Cook the macaroni according to the package instructions. Drain and set aside.
Heat the oil in a frying pan and fry the onion and garlic till soft.
Stir in the soya mince or Quorn (if using) and tomatoes, and fry for 2-3 minutes. Add the spices and herbs, and fry for a further minute. Remove from the heat and stir in the cheese and macaroni. Season to taste and transfer to a large square ovenproof dish.
Preheat the oven to 400F/200C. To make the topping, melt the butter in a pan, stir in the flour and cook for 1 minute. Gradually add the milk, stirring contantly until the sauce begins to thicken. Remove from heat and stir in the cheese. Quickly add the beaten eggs and yogurt, mix thoroughtly, season, then pour over the macaroni mixture.
Bake for 30 minute, then allow to cool for a few minutes. Cut into squares and serve with a green salad.

For the pasta
- 3 litre of water
- 1 tbsp salt
- 250 g pasta for pastitsio
- 100 g grated cheese
For the meat sauce
- 50 ml olive oil
- 700 g miced meat - beef or beef+pork
- 1 chopped onion
- 1or 2 fine chopped carrots
- allspice
- some chopped parsley or celery
- 50 ml wine / cognac
- 350 g canned tomatoes/ 500 g chopped tomatoes
- 200 ml of water
- 1 Laurel leaf
- salt and pepper

For the Bechamel sauce:
- 2 tbsp oil
- 70 g butter
- 70 g flour
- 700 ml of warm milk (not hot)
- 1 egg
- nutmeg
- salt and pepper
20x30 cm Tray

Greek Cheese Pie Recipe #recipe
You asked me for my cheese pie recipe. Here it is:
Set your oven to 375F
You will need
One package of Filo Pastry I use 5-6 sheets on the bottom and 5-6 Sheets of filo on the top
Olive oil to lather the baking tray and in-between each sheet. This is what makes the filo crispy
400 grams of Feta ( one container)
475 grams Ricotta (One container)
1/4 tsp black pepper
3 eggs
Bake cheese pie for 45min
Score pie before putting it in the oven.

This special Pie comes from the Epirus prefecture. It combines beloved pasta with a tangy filling of Greek yoghurt and grated cheeses, baked wrapped in a crispy, flaky phyllo pastry!
It is an unusual pie, deeply delectable. Traditionally in Epirus which is renowned for its pie variety, they make it as a special treat during either Christmas or the Carnival Season-as well as all year round, of course, because who wouldn’t like a taste of this gorgeous pie?

INGREDIENTS:
Ingredients for boiling the pasta:
• 500 gr / 1 lb 2 oz Macheroni Pasta (or Penne or thick tubes for Pastitsio)
• 2.5 lt / 10 cups Water
• Salt flakes
• Ground Pepper
• 2 tbsp. / 28 gr / 1 oz Butter, melted
Ingredients for the Filling:
• 270 gr / 9.5 oz Feta cheese, finely crumbled in food processor
• 250 gr / 9 oz Graviera or Kefalograviera cheese, finely grated (altern: Gruyere)
• 4 Large Eggs
• Ground Salt and Pepper
• 1 and ½ cups / 375 ml fresh Milk
• 0.7 cup / 200 gr / 7 oz Greek Strained Yoghurt 2% or 0% fat
• and the Boiled Pasta
Ingredients for the Phyllo pastry:
• ½ package / 225 gr / 8 oz / 6 large Phyllo sheets (thawed)
• 2 medium Eggs
• 2 tbsp. / 30 ml Olive oil
• 2 tbsp. / 30 ml Fresh Milk

Αυτή η ξεχωριστή πίτα προέρχεται από την Ήπειρο. Συνδυάζει αγαπημένα ζυμαρικά με μια πικάντικη γέμιση από στραγγιστό γιαούρτι και τριμμένα τυριά, ψημένα τυλιγμένα μέσα σε τραγανό φύλλο κρούστας!
Είναι μια ασυνήθιστη πίτα, βαθιά νόστιμη. Παραδοσιακά στην Ήπειρο, που είναι γνωστή για τις πίτες της, τη φτιάχνουν σαν ξεχωριστό πιάτο είτε τα Χριστούγεννα ή τις Απόκριες – αλλά φυσικά και όλο το χρόνο, γιατί σε ποιον δεν αρέσει να δοκιμάσει αυτή την λαχταριστή πίτα;

ΥΛΙΚΑ:
Υλικά για το βράσιμο των ζυμαρικών:
• 500 γρ / 1 lb 2 oz Ζυμαρικά τύπου Ματσερόνι ή Πέννες ή χοντρά Παστίτσιου
• 2,5 lt / 10 φλιτζάνια Νερό
• Νιφάδες Αλατιού
• Φρεσκοτριμμένο Πιπέρι
• 2 κ.σ. / 28 γρ / 1 oz Βούτυρο, λιωμένο
Υλικά για τη γέμιση:
• 270 γρ / 9,5 oz τυρί Φέτα, ψιλοθρυμματισμένη στο μούλτι
• 250 γρ / 9 oz τυρί Γραβιέρα ή Κεφαλογραβιέρα, τριμμένη ψιλά
• 4 Μεγάλα Αυγά
• Φρεσκοαλεσμένο αλάτι και πιπέρι
• 1 ½ φλ. / 375 ml φρέσκο Γάλα
• 0,7 φλ. / 200 γρ / 7 oz Στραγγιστό γιαούρτι 2% ή 0% λιπαρά
• και τα βρασμένα μακαρόνια

• ½ συσκευασία / 225 γρ / 8 oz / 6 μεγάλα Φύλλα (αποψυγμένα)

* 10 phyllo sheets
* 450g bucatini or #4 pasta
* 1 cup strained Greek yogurt
* 500g cream cheese
* 1-1/2 cups crumbled feta cheese
* 1-1/2 cups grated gouda cheese
