Perfect for the upcoming holidays or a normal evening dinner, we present to you our rendition of Trinidadian Macaroni Pie (aka Mac-n-Cheese). Silky and savory with a subtle hint of spice, this classic dish pairs nicely with Stew Chicken or Oxtail, not forgetting some callaloo. This is comfort food at its finest. An awesome dish for anyone looking to jazz up a traditional casserole.

2 lbs. Elbow Noodles
24 oz. Evaporated Milk
8 ½ cups Cheddar Cheese
4 Large Eggs
2 Jalapenos - grated (optional)
2 tbsp Garlic - grated
1 Medium Sweet Onion - grated
1 Small Red Bell Pepper - thinly sliced
2 tsp Ground Black Pepper
1 tsp Salt
BOILING PASTA
6-8 quarts of Water
2 tbsp Salt
1 tbsp Vegetable Oil
How To Make Trini Macaroni Pie | Foodie Nation x Chef Jeremy Lovell
National Culinary Team Captain, Chef Jeremy Lovell, stopped by to teach Kezzianne how he prepares a Trini Sunday Lunch essential, MACARONI PIE:
INGREDIENTS
2 cups elbow macaroni, uncooked
1 tbsp salted butter
¼ cup onion, finely chopped
2 tbsp chopped pimento
4 oz grated carrots (optional)
2 tbsp chopped celery
4 oz Mayonnaise (optional)
2 large eggs
2 2/3 cups evaporated milk
¼ tsp salt
¼ tsp white pepper
1 tsp garlic powder
1 1/2 tsp mustard
1/2 tsp dried thyme
a pinch of cayenne pepper, optional
3½ cups grated New Zealand cheddar cheese (local cheese), reserve ½ cup for topping
METHOD
1. Preheat oven to 350°F.
2. Grease a 9x11 baking dish, and set aside.
3. Boil macaroni in salted water according to package directions. Once cooked, drain the macaroni and place back into the pot, leaving it off the heat to cool down.
4. Melt butter in a skillet over medium heat. Add onions, pimento carrots and celery, cook until softened and slightly caramelized. Scrape the mixture and melted butter into the pot with the macaroni. Stir to combine.
5. In a large bowl, beat eggs and mayonnaise together until fluffy. Add milk, salt, pepper, garlic powder, dry mustard, dried thyme and cayenne pepper. Stir to combine.
6. Pour the egg mixture over the macaroni and stir until well coated.
7. Stir in 3 cups of the shredded cheese.
8. Pour into a greased, 9x11 baking dish and top with reserved ½ cup of shredded cheese.
9. Bake until the pie is firm, and the top is golden brown. About 35-40 minutes.
10. Allow pie to rest for 10-15 minutes before serving.

Ingredients (4 servings)
- 700g Raw Chicken Breast (from @saffron_alley - love the quality of their chicken)
- 3-4 Garlic Cloves Minced
- 1 tsp Black Pepper
- 2 tsp Paprika
- 1 tsp Salt
- 2 tsp Olive Oil
- 30g Honey
- 40g BBQ Sauce Reduced Sugar (Brand: Tescos)
- 225g Uncooked Macaroni Pasta | 500g Cooked Weight
- 250ml Skimmed Milk
- 60ml Hot Sauce (Brand: @sauce_shop i used buffalo sauce, you can use sriracha or any hot sauce you like - also use less if too spicy)
- 120g Light Cream Cheese (Brand: Philadelphia Lightest)
- 40g Low Fat Cheddar Cheese
- Garnish with Parsley

Important Cooking Notes:
- Cook the chicken on medium high heat for 3-4 mins each side till golden brown
- Make sure you TURN OFF the heat before adding honey and BBQ sauce
- For the creamy sauce, add all ingredients on low heat then stir gently with a whisk preferably till it thickens and is smooth
- You can freeze these meals and reheat in a pan or microwave. Keep in the fridge for up to 4 days

Flaky layers of phyllo and creamy feta cheese make a perfect easy pie! This yummy treat only needs four ingredients! Get the recipe:
Ingredients:
14 ounces feta cheese, crumbled
2 eggs
10 sheets phyllo dough, thawed if frozen
1/2 cup olive oil
Directions:
1. Preheat the oven to 350 degrees F (175 degrees C). Grease two 9-inch round cake pans.
2. Mix feta cheese and eggs together in a bowl for the filling; set aside.
3. Lay out 1 sheet of phyllo on a work surface and brush liberally with olive oil. Top with another sheet and brush with oil. Repeat for a total of 4 sheets, but do not brush the top of the fourth sheet. Transfer the stack of oiled sheets to one of the greased cake pans. Drape over the bottom of the pan, trying not to be too perfect about it; you want some folds and wrinkles in the phyllo.
4. Spread 1/2 of the filling over the phyllo in an even layer. Fold the overhanging phyllo over the filling, again letting natural folds and wrinkles occur. Loosely lay 1 sheet of phyllo over the top, brush with oil, and use the oiled brush to pat down the sides all around the circumference of the cake pan.
5. Repeat with remaining phyllo, oil, and filling to assemble the second pie.
6. Bake the cheese pies in the preheated oven until the tops are a deep golden brown, 45 to 60 minutes. Let cool for 20 minutes before slicing. Serve warm or at room temperature.
