How To make Oven Steamed Flounder Cantonese Style
4 Scallions trimmed
cut into
2 Ginger :
julienned
4 4 oz flounder, red snapper,
2 tb Light or reduced soy sauce
1 t Sesame oil
1/2 ts Sugar
Dash of hot chili oil :
or- Dash of red pepper flakes Cilantro -- for garnish
Recipe by: Michael Kinneer <MKinneer@AOL.COM> In a baking dish put 1/3 of the ginger and the scallion on the bottom. Put the fish fillets atop. Place the remaining scallion and ginger atop the fish. Combine the remaining ingredients (not the cilantro) and pour over t fish. Let stand for 15 minutes. Cover with foil and bake at 375 degrees for approximately 15 minutes or until fish flakes when pressed gently. Garnish with cilantro. Hope you enjoy. Great with rice pilaf

To purchase fresh pomfret:
Cantonese steam is the best way to cook fresh fish, it really brings out the flavour and it's the simplest way! Today we are cooking this Steamed Chinese Pomfret with Fried Garlic. The fish is gutted and cleaned and came with frozen packaging. Just need to thaw frozen fish in tap water. Now, let's watch the video and our recipe is down below:-
Ingredients:-

Chinese Pomfret - 800g~1kg
Garlic - 15 cloves
Green Onions - 1 sprig
Ginger - 10 slices
Minced Ginger - 2 slices
Cooking oil - 4 tablespoons
Shao Xing Wine - 1 tablespoon
Sauce Ingredient:-
Soy Sauce - 3 tablespoons
Chicken seasoning powder - 1/4 teaspoon
Sugar - 1 1/2 teaspoon
Water - 2 tablespoons
Sesame Oil - few drops
Seasoning:-
Salt & Pepper
Garlic Oil - 1 tablespoon
1) Thaw fish in tap water, leave for 30 minutes
2) Chop and mince garlic
3) Green onions cut into 5cm length, keep some for garnishing
4) Ginger slice
5) Prepare sauce - Combine soy sauce, chicken seasoning powder, sugar, water & sesame oil
6) Preheat cooking oil over medium heat
7) Turn to medium low heat. Add in half of the minced garlic, stir constantly to avoid getting burn.
8) When garlic turns light brown, remove and strain oil.
9) Stir fry minced ginger in remaining garlic oil
10) Add in the sauce mixture and cook for 1 min.
11) Add in Shao Xing Wine. Remove and set aside
12) Chinese Pomfret, scrape off fish scale and cut 2 slits on both sides.
13) Season with salt & white pepper. Add ginger slices and green onion into cavity.
14) Place ginger and green onion on the plate and on top of fish.
15) Steam fish for 5 minutes over high heat
16) Remove steam fish water, ginger and green onion.
17) Cover fish with remaining garlic, fried garlic and drizzle some garlic oil
18) Cover and steam for another 10 minutes.
19) Once fish is cooked, pour sauce over and garnish with fried garlic, green onions & coriander.
20) Reheat garlic oil (2 tablespoons) then drizzle hot oil on top of fish.
