How To make Bengali Style Oven Fried Potatoes
2 lb Russet potatoes
Olive oil spray 1/4 ts Turmeric
1/2 ts Cumin
1/4 ts Cayenne
Salt & pepper Preheat oven to 400F. Remove oven racks & spray them with oil. Wash potatoes & slice them lengthwise into sticks 1/2" thick or crosswise into rounds 1/3" thivk. Trnasfer to a baking pan & spray well with oil. Add seasonings & toss to coat. Place the rounds in a single layer on the oven racks. Place the racks in the centre of the oven. Bake until the potatoes are tender, with a deep, golden-brown crust, about 20 to 25 minutes. Serve piping hot.

Fried Potato Skins Recipe :
Potatoes - 5 nos
Oil - For Deep Frying
Salt - 1 tsp
Pepper - ½ tsp
Parsley (Finely Chopped) - ½ tsp
Paprika - 1 tsp
Garlic Powder - ¼ tsp
Salt - A pinch
Black Pepper Powder - A Pinch
Instructions:
1. Peel potatoes, put the skins in a bowl of water with salt and wash them thoroughly.
2. Take out the potato skins, spread them evenly on a tray and let them dry for 6-7 hours.
3. Heat oil in a kadai, Deep fry the potato skins till they turn golden brown and crispy.
4. Transfer the Fried Potato skins to a bowl.
5. Prepare a seasoning with salt, pepper, paprika, garlic powder and parsley and add it to the fried potato.
6. Toss it till it mixes evenly with the potatoes.
7. Serve it hot with a dip or tomato ketchup on the side.
Cooking Tips:
1. Any kind of seasoning like peri peri, cheese seasoning etc., can be added to the skins instead of salt and pepper.

Crispy Roasted Cajun Garlic Fries ????????️ – crispy on the outside and fluffy on the inside. The secret to these is a lot of oil for it to roast in and at a high temperature. No special steps to take such as soaking to remove starch or preboiling. A lot of times I just want to get these fries on the table quick and this quick one step method has always worked for me. Flavour these however you want but I love a good cajun spiced fry! I use granulated garlic rather than the fresh stuff as it roasts at a high temperature and the garlic can quickly burn.
4 large russet potatoes, cut into French fries
¼ cup light olive oil, or any neutral oil
1.5 tbsp Cajun seasoning (I used unsalted)
1 tbsp granulated garlic
1 tbsp salt
Fresh parsley for garnish
Preheat oven to 425 F. In a parchment lined baking sheet toss the cut potatoes with oil, Cajun seasoning, granulated garlic, and salt.
Roast in the oven for 15 minutes. Take the sheet pan out and flip the potatoes and take the pan back to the oven and roast again for another 15-20 minutes until golden and crispy.
Garnish with fresh parsley and in the video I served these with garlic sauce.
