How To make Oven Fried Potato Stew
5 Potatoes
Beef (or Lamb or Turkey) [quantity according to budget] 3 onions -- (3 to 4)
2 cups tomato paste (Salsa)
Cardamom Salt and pepper
This recipe needs two cooking pots and an oven dish.
Cut 1 onion into 4 pieces (this goes with the meat when it is boiled). Cut the remaining onions into ring slices and place them in a cooking pot, and keep the other onion for later use.
Wash and peal the potatoes and cut them into thick slices and put in the pot, add water to cover the and add the tomato paste and salt and pepper to taste.
Boil the mixture for about an hour until the potatoes are cooked.
In the mean time cut the beef into 2x2x2cm cubes and put in another pot with the remaing onion and the cardimom. Boil for about 1/2 an hour, then fish the cardimom out.
Preheat the oven.
Layer the potatoe and onion slices in the oven dish together with the beef cubes.
Pour the beef broth (Bahreez) resulting from boiling the beef in the oven dish, and put the dish in the preheated oven. Cook until the potatoe become red in colour (10-15 mins). You might need to add more broth if all the water is absorbed before that.
Variations and Comments: You can miss out on the meat to end up with a vegeterian dish. You can use a layer of uncooked tomatoes as well. You can also add a layer of uncooked onions.
This is a low fat version since there is no fat used in cooking. For a lower fat version use turkey instead of beef. For a fuller fat version with nice distinctive taste use lamb.
This is the quick way of cooking this dish and requires less time than cooking everything in the oven from their raw state (using thinly sliced potatoes).
The proper, full taste, full fat would involve frying some of the (meat, onions, tomatoes with possibly some garlic) in olive oil rather than boiling them.
Serves 5-6.

Southern Style Potatoes and Onion
Ingredients:
12-15 whole white potatoes (cut into cubes)
1 sweet onion (sliced)
1/2 stick unsalted butter
Cajun seasoning
Black pepper
Cayenne pepper
Onion powder
Garlic powder
Oregano (dried)
Water (or chicken broth)
Directions:
1. Wash and peel your potatoes, cut them up into
cubes. Cut your onions into slices.
2. Toss your potatoes and onion into a cooking pot. Set your stove
@ min. High heat.
3. Add all of your ingredients into the pot. Add you water, but DO
NOT COVER THE POTATOES WITH THE WATER. Just add
enough to barely cover the potatoes. You can substitute
chicken broth in place of the water, this will give it great flavor as
well.
4. Boil your potatoes until they are fork tender... If you think you
have too much water left after your potatoes are tender, simply
pour some out. Now, use your spatula to break apart some
potatoes.
5. Taste to see if you need to add more salt...garnish with cajun
seasoning and parsley.

OMG these skillet pan fried potatoes are so deliciously good! The potatoes are fried with buttery onions, they are full of flavor and cooked to perfection. These potatoes can be served as breakfast potatoes. They are also the perfect potato side dish.
INGREDIENTS
6 gold potatoes, about 1.5 lbs
1 large onion
1 tsp salt
1/4 tsp black pepper
1 tsp paprika
1 tsp dried parsley
1/2 tsp dried thyme
1 tsp adobo seasoning

less than 1/4 tsp cayenne pepper

Y'all. You have GOT to try this recipe! You'll thank me!! This is the best Baked Potato Soup I've ever had in my life. You're gonna love it!
♥ THE BEST BAKED POTATO SOUP RECIPE:
6 large baking potatoes
1 medium onion, chopped or diced
1 1/2 cups chicken broth (add more if needed when cooking)
4 Tbsp butter
3 cloves minced garlic
1/2 tsp black pepper
1 tsp salt
1 cup heavy cream
2 cups sour cream
???? Peel the potatoes and cut into small cubes. Place potatoes & onion in a soup pot with enough water to cover. Cook covered on med-high until fork tender (about 15 minutes). Drain, return to the pot and mash (mash as much or as little as you like). Add chicken broth, butter, garlic, and salt and pepper. Return to medium heat and bring to a boil. STIR CONSTANTLY!!! This will pop pretty badly - so don't get burned! (Add extra broth if the consistency is too thick) Reduce the heat to med-low and let it simmer for about 10-15 minutes. (I only let it simmer for about 5 min and I'm constantly stirring) Add heavy cream and bring to a boil -- stirring frequently. Once it's to a low boil, reduce heat to low and cover and let it simmer for a couple of minutes. Remove from heat and add sour cream. Return to low heat and stir until the sour cream has heated through. Serve and enjoy!!
