How To make Steak & Guinness Pie
2 1/4 lb Round steak
1 tb Flour
1 ts Brown sugar
1 tb Raisins; (opt)
5 Onions
10 fl Guinness
8 sl Bacon
3 oz Lard
Parsley; chopped 1 Recipe of short pastry*
*For double-crust pie in deep pie dish. -- Cut the steak into bite sized cubes, roll in seasoned flour, and brown in the lard with the bacon, chopped small. Place the meat in a casserole, peel and chop the onions, and fry until golden before adding them to the meat. Add the raisins (if wanted) and brown sugar, pour in the Guinness, cover tightly and simmer over a low heat or in a very moderate oven (325-350F) for 2 1/2 hours. Stir occa- sionally, and add a little more Guinness or water if the rich brown gravy gets too thick. Meanwhile, line a deep pie dish with half the pie crust: bake it blind: then add the Guinness/beef mixture from the casserole, cover with the top layer of pie crust, and bake until finished, probably about 10 more minutes. Variation: for the brown sugar, substitute 3 T honey.

Served with Goose Island Imperial Stout
Ingredients
For the pastry
450g flour
salt & pepper
50ml milk
50ml warm water
150g chopped lard
1 yolk, beaten
For the filling
600g skirt steak, cut into big chunks
150g thick sliced button mushroom
1 grated onion
1 celery stick
1 lrg carrot
1 bay leaf
50g flour
Rosemary
100ml beef stock
150ml Goose Island Ale
50ml Worcestershire sauce
salt & pepper
Method
1. To make the pastry, sift the flour into a bowl and season well
2. Warm the milk, water and lard until the lard has melted. Bring just to the boil and pour onto the flour mix, stir well, then turn onto a floured surface and knead for 3-4 mins
3. Roll the dough out (if it’s a bit difficult to do, press into the tin) then press into 4 pork pie tins. Save enough pastry for a lid. Blind bake for 15 min with baking beans then remove and bake for a further 5 without.
4. For the filling, first fry the beef to brown, then remove from the pan
5. Gently fry the mushrooms off with no oil or fat. Then the onion, celery and carrot, add the rest of the ingredients cook for 2 hours, cool.
6. Spoon into the cases, put on lids. Brush with egg and cook for 25 minutes at 200°c until crisp and golden

Absolutely Delicious STEAK And GUINNESS Ale Pie - NOM NOM NOM
Something very special this week with my sensational Steak and Guinness Pie recipe. Succulent beef shin, slow cooked to melt in the mouth perfection and encased in crispy golden pastry. I certainly had a twitching in my loins while making this before it brought me to a climax of unbridled joy. Don't check your browser either. You're definitely still on Youtube and not Instagram.
Steak and Ale Pie recipe:
Filling:
900g chopped shin beef seasoned with salt and pepper plus the marrow from the bones if you have them
1 large onion
2 medium carrots
150-200g sliced mushrooms
2-3 cloves garlic
1 tsp mustard
1 tbsp tomato puree
1.5 tsps salt
Half a tsp pepper
1.5 tbsps Worcester sauce
Dried herbs of choice
0.5 tsps sugar
Around 500ml Guinness
200-300ml water
Around 2 tsps corn starch with cold water to thicken
Shortcrust Pastry recipe:
400g all purpose flour
200g butter
1 tsp salt
0.5 tsp pepper
1 level tsp each of dried thyme and oregano
0.5 tsp baking soda
2 eggs
1-2 tbsps milk
2 egg yolks and a splash of milk for the glaze

The Pub Classic Steak & Ale Pie (Beef & Ale Pie)
Beef and ale pie , tender diced beef cooked in a rich stout gravy. A pub classic topped with golden brown short crust pastry. Packed full of flavour and a few vegetables. Served with creamy mash and peas.
Ingredients
400 g Diced Beef
2 Sliced Onions
330 ml can of stout
300 ml Strong Beef Stock
40 g Butter
40 g Plain Flour
60 ml of Tomato Puree
1/4 teaspoon Pepper
2 Bay Leafs
Method :
Fry off the onions in the butter in a flame proof oven pot until they are soft.
Add the beef and cook for 5 minutes until brown.
Season with Black Pepper.
Coat the beef with the Flour and mix it up with a wooden spoon.
Make up 300 ml of stock using 3 beef stock cubes.
Add the Ale or Stout and mix it up.
Add the beef stock.
Add the Tomato Puree and 2 Bay Leafs
Cover and cook in the oven at 150 c for 1 hour.
While the beef is cooking prep any veg you want to add to this pot, Carrots , Peas, Mushrooms.
After 1 hour remove the pot from the oven and add the extra veg and mushrooms.
Return to the oven for a further hour.
