How To make Guinness Cheesecake
2 pk Of cream cheese (8 oz.)
1 ts Vanilla
1/2 c White sugar
1/4 Guinness Extra Stout
1/2 ts Cinnamon.
I mixed this all up, but it seemed a little thin, so I added 2 tbsp of flour (it may need more, and finally) 2 eggs.
I poured this into a 'nilla wafer crust, but I suggest you use a springform pan because it will rise. Bake at 350 F for about 40 minutes. It tastes pretty good, but it doesn't hold together all that well. Next time I'll try an extra egg. Have fun! The cheesecake comes out a pale tan. How to Make Guinness and Chocolate Cheesecake - Cheese Cake Recipe
Preparation and Cooking Time: Depend on your need.
Ingredients
1. 1 cup crushed chocolate cookies
2. 1/4 cup butter, softened
3. 2 tablespoons white sugar
4. 1/4 teaspoon unsweetened cocoa powder
5. 3 (8 ounces) packages cream cheese, softened
6. 1 cup white sugar
7. 3 eggs
8. 1/2 pound semisweet chocolate chips
9. 2 tablespoons heavy cream
10. 1 cup sour cream
11. 1 pinch salt
12. 3/4 cup Irish stout beer (e.g. Guinness)
13. 2 teaspoons vanilla extract
14. 1 (1 ounce) square semi-sweet chocolate
Instruction
1. Preheat oven to 350 degrees F (175 degrees C). Prepare a 9-inch springform pan with butter.
2. Combine the crushed cookies, butter, 2 tablespoons sugar, and cocoa in a small bowl; mix; press into the bottom of the prepared springform pan.
3. Place the cream cheese in a large bowl and beat with an electric mixer set to low speed until smooth. While beating, slowly add 1 cup sugar and then the eggs, one at a time. Continue beating until smooth.
4. Combine the chocolate chips and heavy cream in a microwave-safe bowl. Heat in the microwave until the chocolate is completely melted, stirring every 30 seconds.
5. Beat the chocolate into the cream cheese mixture. Add the sour cream, salt, beer, and vanilla; blend until smooth.
6. Pour the mixture over the crust.
Place the pan into a large, deep baking dish. Fill the dish with water to cover the bottom half of the springform pan.
7. Bake the cheesecake in the water bath in the preheated oven for 45 minutes; turn the oven off; leave the cheesecake in the oven with the oven door slightly ajar another 45 minutes; remove from oven.
8. Run a knife along the edge of the cheesecake to loosen from pan. Chill in refrigerator at least 4 hours.
9. Melt the semisweet chocolate in a small bowl using the microwave.
10. Make chocolate clovers by dropping 3 small drops of melted chocolate close to one another on waxed paper.
11. Drag a toothpick from between two dots outward to make the stem; chill until hardened. Arrange the chocolate clovers on top of the chilled cheesecake for decoration.

*Ingredients:*
_For the Guinness Chocolate Cake:_
• 1¼ cup (275g/9½ oz) Melted Butter.
• ¾ cup + 1 tbsp (200ml/6.76 floz) Guinness Stout.
• ¾ cup + 2 tbsp (175g/6oz ) Brown Sugar.
• ¾ cup + 2 tbsp (175g/6oz) Caster Sugar.
• ½ cup + 1 tbsp (65g/2oz) Cocoa Powder.
• ½ cup (150ml/5.07fl oz) Sour Cream.
• 3 Medium Eggs.
• 1½ tsp Vanilla Extract.
• 1½ cups + 3 tbsp (275g/9½ oz) Plain/All Purpose Flour.
• 2 tsp Bicarbonate of Soda/Baking Soda.
• Pinch of Salt.
_For The Cream Cheese topping:_
• 1¼ cup + 1 tbsp (300g/10 ½oz) Full Fat Cream Cheese
• 1 cup + 3 tbsp (175g/7oz) Icing Sugar.
• 1 tsp Vanilla Extract.
• ¼ cup + 3 tbsp (100ml/3.38 floz) Double Cream.
_Serve with:_
• Ice Cream
• Whipped Cream
*Method:*
1. Preheat the oven to the following temperatures.
• 160°C/320°F [Fan Oven]
• 180°C/360°F [No-Fan]
• Gas Mark 4.
2. Line the base and sides of an 8 inch round loose-bottom cake tin.
3. For the chocolate Guinness cake: In a large bowl mix together the melted butter, Guinness, brown & white sugar and cocoa powder.
4. Add in the sour cream, vanilla extract and whisked eggs and mix until fully combined.
5. Sieve in the plain/all-purpose flour, bicarbonate of soda and salt and fold into the mixture.
6. Pour into a lined 8-inch round tin and bake in a preheated oven for 45 minutes or until a knife inserted into the middle of the cake comes out clean.
7. When baked, allow it to cool for 15 minutes in the tin before cooling completely on a wire rack.
_For the cream cheese topping._
1. Mix together full-fat cream cheese and icing sugar until soft.
2. Add in the vanilla extract and cream and mix until thick.
3. Spoon the cream cheese topping on top of the cake and speak it right out to the edges.
4. Refrigerate until ready to serve.

Recipe of the Day: Chocolate Guinness Cheesecake

Ingredients
1 1/2 cups crushed chocolate wafer crumbs
3 tablespoons sugar
3 tablespoons butter, melted with 1 tablespoon of water added.
FILLING:
1/2 cup dark cocoa powder
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
3 large eggs, lightly beaten
1 teaspoon vanilla extract
1/2 cup of Guinness
Top with Baileys whipped cream!
Bailey's Whipped cream
2 cups of heavy cream
1/4 c of sugar
1/2 teaspoon of vanilla
1/2 cup of baileys
Add all ingredients into a bowl and beat until stiff peaks from.
Directions
In a small bowl, combine cookie crumbs and sugar; stir in butter mixture. Press onto the bottom of a greased 9-in. spring form pan; set aside.
In a large bowl, beat the cream cheese, sugar and cocoa powder until smooth. Add eggs; beat on low just until combined. Stir in vanilla and Guinness just until blended. Pour filling over crust.
Bake at 350° for 40-45 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight
